Prepare the Salsa Rossa

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the tomatoes, red wine vinegar, salt, and pepper. Simmer for about 15 minutes, stirring occasionally. Remove from heat and stir in fresh basil.

Cook the Fingerling Potatoes

Boil the fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and set aside. Optionally, you can sauté them in olive oil with salt and pepper for added flavor.

Cook the Rapini

In a separate pot, bring salted water to a boil. Add the rapini and cook for about 3-5 minutes or until tender. Drain and set aside.

Grill or Sear the Steak

Season the flat iron steak with salt and black pepper. Heat a grill or skillet over medium-high heat and add 1 tablespoon of olive oil. Cook the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let it rest for a few minutes before slicing.

Plate the Dish

Slice the steak against the grain. On a plate, arrange the fingerling potatoes, rapini, and slices of steak. Drizzle with salsa rossa and garnish with additional basil if desired.
