Method
Prepare bread and spread
Bring softened butter and mayo to room temperature if chilled. In a small bowl combine mayonnaise and Dijon mustard until smooth.
Spread about 1 tablespoon of the mayonnaise-Dijon mixture evenly on one side of each sourdough slice (this will be the inside of the sandwich). On the outside-facing side of two slices, spread a thin layer (about 1/2 teaspoon) of softened butter to help achieve a golden crust when toasting.
Assemble sandwiches
Lay the two bread slices mayo-side up. Divide the roast turkey evenly between the two sandwiches (about 150 g each). Arrange turkey in an even layer, slightly overlapping.
Season the turkey lightly with 1/8 teaspoon salt and a pinch of black pepper (divide between sandwiches). If using, add thinly sliced red onion (about 2 tablespoons per sandwich), tomato slices (quarter of a tomato per sandwich) and 1–2 pickle slices per sandwich.
Top the turkey and vegetables with 4 slices of cheddar per sandwich (arrange to cover the filling). Place the remaining two bread slices on top, buttered side facing out.
Cook and finish
Place one sandwich in the skillet. Cook for 3–5 minutes until the bottom is golden brown. While the bottom cooks, press down lightly with a spatula or use a heavy skillet/panini press to compress the sandwich for even contact and melting.
Carefully flip the sandwich and cook the second side 3–5 minutes until golden and cheese is melted. If cheese is not fully melted after flipping, cover the skillet with a lid for 1–2 minutes to trap steam and encourage melting.
Optional pan sauce / glaze
If using the glaze, reduce heat to low. Add 1 tablespoon butter to the skillet and swirl until melted. Stir in 1 teaspoon maple syrup (or honey) and 1/2 teaspoon Worcestershire sauce. Tilt the pan and spoon the glaze over the top of the sandwich once or twice to give a glossy, slightly sweet finish. Remove sandwich from pan.
Transfer each sandwich to a cutting board. Let rest 1 minute, then slice in half on a diagonal. Serve immediately.
