Prepare Turkey Bacon

Pan-fry method

Place a large nonstick or stainless steel skillet over medium heat. Add the turkey bacon strips in a single layer (no oil needed; turkey bacon releases moisture). Cook for 3–4 minutes on the first side without crowding, then flip and cook 2–3 minutes more, or until edges are lightly browned and bacon reaches an internal temperature of 165°F (74°C). Transfer cooked bacon to a plate lined with paper towel to drain and keep warm.

Alternative: Oven method

Preheat oven to 425°F (220°C). Arrange turkey bacon in a single layer on a rimmed baking sheet lined with foil or parchment. Bake 10–14 minutes, flipping once halfway, until crisped to your liking. Remove and drain on paper towel.

Cook Eggs

Heat pan and melt butter

After removing the bacon, wipe the skillet lightly if there are large burnt bits, then reduce heat to medium-low and add 1 tbs unsalted butter. Swirl until melted and foamy, about 20–30 seconds.

Crack and season eggs

Crack the 3 eggs into a small bowl (or crack directly into the pan if preferred). Season eggs with about 1/2 tsp kosher salt and 1/8 tsp black pepper now or after cooking to taste.

For soft scrambled: Pour cracked eggs into the pan. Let sit undisturbed for 10–15 seconds, then using a silicone spatula stir gently, folding edges toward the center every 10–15 seconds. Cook 1.5–2 minutes until large, soft curds form but eggs remain moist. Remove from heat just before fully set; residual heat will finish them. Adjust seasoning with remaining salt and pepper to taste.

Alternate styles

Sunny-side up / over-easy: Reduce butter to 1 tsp. Heat pan over medium-low, crack eggs carefully into pan spaced apart. Cook sunny-side 2–3 minutes until whites set but yolks runny. For over-easy, cook until whites set then gently flip and cook 15–30 seconds more. Season to taste.

Finish & Serve

Arrange the cooked eggs on a plate and place the turkey bacon alongside. Sprinkle chopped fresh chives over the eggs if using. Serve immediately with optional hot sauce or ketchup on the side.

Notes: If using salt measured above, start with half and adjust to taste. Cooking times vary slightly with pan thickness and stove; aim for eggs cooked to your preferred doneness and turkey bacon crisped through.
