Cook sausage
Bring sausages to room temperature for 5 minutes if refrigerated. Heat a 10-inch skillet over medium heat. Add 1 tsp neutral oil and swirl to coat. Place 4 sausages (links or patties) in the skillet without crowding. For links: cook 10–12 minutes, turning every 2–3 minutes so all sides brown and internal temperature reaches 160°F (71°C). For patties: cook 4–5 minutes per side until browned and cooked through. Reduce heat to low to keep warm once done and cover loosely with foil; reserve pan for eggs (wipe excess grease if necessary, leaving a thin film for flavor).
Eggs — choose style
Scrambled
Beat 3 eggs in a bowl until yolks and whites are combined and slightly frothy (about 10–15 seconds). Melt 1 tbsp butter in the skillet over medium-low heat until foaming. Pour eggs in and let sit 10–15 seconds, then gently stir with a silicone spatula, pushing from edges to center. Cook, folding occasionally, until large soft curds form but eggs are still slightly glossy, 2–3 minutes total. Season with 1/4 tsp salt and 1/8 tsp pepper near the end. Remove from heat just before fully set; eggs will finish cooking from residual heat. Sprinkle chopped chives if using and transfer to plate.
Fried (sunny-side-up)
Heat 1 tbsp butter over medium-low until it foams but does not brown. Crack eggs gently into skillet, spacing them apart. Reduce heat to low and cover skillet with a lid. Cook 3–4 minutes until whites are set and edges are slightly lacy but yolks remain runny. Season each egg with a pinch of salt and pepper. Remove with a spatula and plate alongside sausages.
Over-easy / Over-medium / Over-hard
Follow sunny-side-up steps but when whites are mostly set (2–3 minutes), gently flip each egg with a thin spatula. For over-easy: cook 15–20 seconds more (runny yolk). Over-medium: 30–45 seconds (slightly set yolk). Over-hard: 1–2 minutes (fully set yolk). Season with salt and pepper and plate.
