Method
Prepare egg mixture
Crack the eggs into a medium bowl. Add the milk, salt, and black pepper.
Whisk vigorously until the whites and yolks are fully combined and the mixture is slightly frothy (about 30–45 seconds). This adds lightness to the omelet.
Heat pan and cook
Let the eggs sit undisturbed for 5–10 seconds so the edges begin to set. Then, using a heatproof spatula, gently push the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Repeat this motion every 10–15 seconds until the omelet is mostly set but still slightly glossy on top (about 1.5–2 minutes total).
When the surface is mostly set but still slightly soft (no visibly runny egg), you can optionally smooth the top with the spatula. For a classic plain omelet, let it remain uniform without adding fillings.
Tilt the pan and fold one-third of the omelet over the middle, then fold the opposite third over the folded portion to create a tri-fold (or simply fold in half) using the spatula. Do this gently to avoid tearing.
Slide the omelet onto a warm plate, seam-side down.
Finish and serve
Sprinkle chopped chives over the omelet if using. Adjust seasoning with additional salt and pepper to taste.
Serve immediately while still warm. Enjoy plain or with toast.
