Prepare ingredients
Measure lemon juice and zest. Separate 4 large eggs and reserve the yolks only. Cube cold butter and place it ready to add. This mise en place speeds the cooking process and prevents scrambling.
Cook lemon custard
In a medium heatproof bowl (stainless steel or glass), whisk together the 4 egg yolks and 3 tablespoons granulated sugar until smooth and slightly pale, about 30 seconds. Whisk in 1 cup fresh lemon juice and the 2 tablespoons lemon zest until fully combined.
Temper and thicken
Set a saucepan with 1–2 inches of water over medium-low heat to make a gentle simmer (double-boiler). Place the bowl with the lemon-egg mixture over the simmering water (bowl bottom should not touch the water). Stir constantly with a flexible spatula or whisk, scraping the bottom, until the mixture thickens to a custard that coats the back of the spatula — about 8–12 minutes. Keep heat gentle to avoid curdling; do not let mixture boil.
Finish with butter and salt
Remove the bowl from the heat. Immediately add the cold butter, a few cubes at a time, whisking until each addition is fully incorporated and the curd is smooth and glossy. Whisk in a pinch of fine sea salt. Taste and, if desired, add a touch more lemon juice or sugar to balance acidity.
Strain and cool
For an ultra-smooth lemon curd, pass the mixture through a fine-mesh sieve into a clean bowl, pressing with a spatula to remove zest solids and any cooked egg bits. Cover the surface with plastic wrap (touching the curd) to prevent a skin, and chill until completely cool, about 1–2 hours. Curd will thicken more as it cools.

Place a mixing bowl and whisk or beaters in the refrigerator for 10–15 minutes before whipping for best volume (optional but helpful).
Whip cream
Pour 1 cup chilled heavy cream into the chilled bowl. Add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Whip on medium-high speed (or by hand) until soft peaks form — the cream should hold shape but still be smooth and slightly domed, about 2–4 minutes with an electric mixer.
Fold together
Take about one-quarter of the chilled lemon curd and gently whisk it into the whipped cream to lighten and temper the cream. Then fold in the remaining lemon curd with a flexible spatula using gentle strokes until evenly combined. Do not overmix; keep the texture light and airy. Adjust sweetness/tartness by adding a teaspoon powdered sugar or a squeeze of lemon if necessary.
Finish & serve
Taste and adjust: taste the combined lemon cream and add a pinch more salt, a little powdered sugar, or lemon zest if needed.
Chill briefly: if the mixture became soft during folding, chill for 15–30 minutes to firm up before serving.
Serve: spoon or pipe the lemon cream into serving glasses, tart shells, or use as a layer in cakes, trifles, or as a topping for pavlova. Garnish with thin lemon slices, extra grated lemon zest, or a small mint leaf.
Storage: store covered in the refrigerator for up to 3 days. Lemon curd component can be refrigerated for up to 1 week or frozen for up to 3 months (thaw and re-whisk).
