Method
Prepare Sandwiches
Preheat and prep
Preheat oven to 375°F (190°C). If using rolls, slice each roll in half horizontally. If using sliced bread, leave whole or butter the outsides later.
Make spread
In a small bowl combine the Dijon mustard, mayonnaise and yellow mustard (if using). Stir until smooth. Spread about 1/2 tsp of the mixture on the cut interior of each top and bottom roll (or one side of each bread slice).
Assemble
On the bottom half of each roll or on one slice of bread place 3 slices of ham folded if necessary to fit, then top with 2 slices of Swiss cheese. Add optional pickle slices on top of the cheese. Place the top half of the roll or second bread slice over the fillings.
Optional Glaze
In a small saucepan or microwave-safe bowl, melt 1 tablespoon butter with the brown sugar and 1 teaspoon Dijon mustard, stirring until smooth. Brush a thin layer of this glaze on the top of each sandwich. This step is optional but gives a sweet-savory finish.
Bake or Pan Toast
Oven method (recommended for multiple sandwiches)
Place assembled sandwiches on a baking sheet lined with parchment. Bake in the preheated 375°F (190°C) oven for 8–12 minutes, until cheese melts and bread is golden. For extra browning, switch the oven to broil for 1–2 minutes—watch closely to avoid burning.
Skillet method (single sandwiches)
Heat a skillet or griddle over medium-low heat. Place the sandwich buttered-side down in the skillet and press gently with a spatula or weight. Cover with a lid for 2–3 minutes to help cheese melt, then flip and cook another 2–3 minutes until both sides are golden and cheese is melted.
Finish and serve
Remove sandwiches from oven or skillet. Let rest 1 minute, then slice in half if desired. Serve hot.
