General prep

Prepare protein

Remove chosen protein from packaging. Pat dry with paper towels. If using a ham steak, score the surface lightly in a crosshatch pattern about 1/8 inch deep. If using sausages, prick each link 1–2 times with a fork to prevent bursting. If using bacon, separate the slices.

Gather seasonings and optional glaze ingredients so they are ready to add during cooking.

Cooking ham steak

Heat pan

Place a large skillet over medium heat. Add 1 tsp oil and 1/2 tbs butter. Allow butter to melt and foam but not burn.

Sear ham

Add the ham steak. Cook 3–4 minutes on the first side until golden and caramelized. Sprinkle 1/4 tsp black pepper and 1/4 tsp kosher salt while it cooks.

Glaze and finish

Flip the ham and reduce heat to medium-low. Mix 1 tbs brown sugar with 1 tsp Dijon mustard and brush over the top. Cook another 2–3 minutes until heated through and glaze is sticky. Remove to a cutting board, let rest 2 minutes, then slice if desired. Garnish with parsley and serve with lemon wedges.

Cooking sausages

Cook gently

Place a skillet over medium-low heat and add 1 tsp oil. Add the sausage links in a single layer. Cook slowly, turning every 3–4 minutes so they brown evenly without splitting. Total cook time about 12–15 minutes until internal temperature reaches 160°F (71°C) for pork sausages.

Optional glaze

In the last 2 minutes of cooking, add 1 tbsp maple syrup and baste the sausages, turning to coat. Continue cooking until the glaze is slightly sticky and sausages are fully cooked. Remove to a plate to rest for 2 minutes, sprinkle with parsley and serve with lemon wedges if desired.

Cooking regular bacon

Fry bacon

Place a cold skillet over medium heat. Lay bacon slices in a single layer without overlapping. Cook 4–6 minutes on the first side until the edges begin to brown and the fat renders, then flip and cook another 3–5 minutes until crispness reaches your preference. Reduce heat if bacon browns too quickly.

Optional sweetened bacon

If you want a sweet glaze, during the last 1–2 minutes sprinkle 1 tbs brown sugar or spoon 1 tbs maple syrup over the bacon and cook until caramelized, watching carefully to avoid burning.

Drain and serve

Transfer cooked bacon to a plate lined with paper towels to drain excess fat. Sprinkle with a pinch of black pepper and parsley if using. Serve hot.

Finishing and notes

Taste one piece and adjust salt/pepper to preference. All three proteins pair well with eggs, toast, or roasted vegetables. Use leftover rendered bacon fat (strain and refrigerate) for cooking potatoes or vegetables.
