Prepare spread and heat pan
Soften 2 tablespoons butter if not already soft. Stir together 1 teaspoon Dijon mustard and 1 teaspoon mayonnaise in a small bowl if using. Preheat a large skillet or griddle over medium-low to medium heat for 3–4 minutes until warm but not smoking.
Assemble Sandwiches
Place 2 unbuttered sides of bread slices facing up on a cutting board. On each slice (unbuttered side), spread about 1/2 teaspoon of the mustard-mayo mixture if using (alternatively just use mustard or mayo to taste).
Top each prepared bread slice with 4 slices of ham, arranging to cover the bread. If you prefer a hotter, more compact sandwich, fold or slightly overlap the ham.
Layer 2 slices of cheddar cheese on top of the ham on each sandwich. Add 1 slice of Swiss on top of the cheddar if using. Season each cheese layer lightly with a pinch of black pepper (about 1/4 teaspoon per sandwich).
Close the sandwiches with the remaining bread slices, buttered sides facing out.
Cook
Add 1 tablespoon unsalted butter or a little oil to the preheated skillet and swirl to coat the surface. Reduce heat to medium-low — the goal is to melt the cheese without burning the bread.
Place both sandwiches in the skillet, buttered side down. Cook undisturbed for 3–4 minutes, checking the underside after 3 minutes: it should be golden brown. If browning too quickly, lower the heat. Press gently with a spatula to encourage even contact.
Carefully flip the sandwiches using a wide spatula. Cook the second side for another 3–4 minutes, pressing gently, until golden brown and the cheese is melted. If the cheese isn't fully melted by the time the bread is browned, cover the pan with a lid for 1–2 minutes to trap heat and finish melting.
Remove sandwiches to a cutting board and let rest 1 minute so the cheese sets slightly, making slicing cleaner.
Serve
Slice each sandwich in half diagonally and serve hot. Optional accompaniments: dill pickle, potato chips, or a simple side salad.
