Method
Hot Coffee
Measure & Heat
Measure 1/3 cup (about 34 g) freshly ground medium-coarse coffee. Heat 12 fl oz (about 350 ml) of water to just below boiling (around 200°F / 93°C).
Brew
If using a drip brewer: place filter and grounds, pour the hot water evenly and start the brew. If using a French press: add grounds to the press, pour hot water, stir gently, place lid and steep 4 minutes, then press slowly. If using pour-over: wet paper filter, add grounds, pour in a slow circular motion until 12 fl oz has passed through.
Iced Coffee
Brew Strong Coffee
Use 1/2 cup (about 45–50 g) coarsely ground coffee and brew with 16 fl oz (475 ml) hot water. Brew by drip, French press (steep 4 minutes), or pour-over. The stronger brew accounts for dilution from ice.
Cool & Sweeten
Let the coffee sit 5 minutes to cool slightly. Stir in 2 tbsp simple syrup while still warm so it dissolves evenly (or add 2 fl oz cold brew concentrate in place of part of the brewed coffee).
Assemble
Fill a tall glass with 1 cup ice. Pour the sweetened coffee over the ice, leaving room for 3 tbsp milk or cold creamer. Stir and adjust sweetness or milk to taste. Serve with a straw.
Hot or Iced Tea (Black or Green)
Hot Tea - Steep
Bring 12 fl oz (350 ml) water to the appropriate temperature: 212°F (100°C) for black tea, 175–185°F (80–85°C) for green tea. Place 1–2 tsp loose leaf (or 1 tea bag) into a teapot or cup. Pour the hot water over the tea and steep: 3–5 minutes for black tea, 2–3 minutes for green tea.
Iced Tea - Brew & Chill
Brew tea slightly stronger by using the same amounts but steeping at the higher end of the time range. After steeping, remove leaves or bag and let the tea cool 10–15 minutes, or chill in the fridge until cool.
Iced Tea - Serve
Fill a glass with 1 cup ice. Pour cooled tea over ice. Add 1 tsp honey or sugar (or simple syrup) and a lemon slice. Garnish with mint if desired and stir before serving.
