Warm and cook vegetables

Heat a small nonstick skillet over medium heat. Add 1/2 teaspoon neutral oil (if using) and then the diced onion and bell pepper. Sauté, stirring occasionally, until softened and translucent, about 3–4 minutes.

Push the vegetables to one side of the skillet and add the diced Canadian bacon to the pan. Cook together for 1–2 minutes until the bacon is warmed through and slightly browned. Remove the filling mixture to a small bowl and set aside.

Prepare eggs

Crack the 3 large eggs into a mixing bowl. Add 2 tablespoons whole milk, 1/4 tsp salt, and 1/8 tsp freshly ground black pepper.

Whisk vigorously until the mixture is homogenous and slightly frothy (about 20–30 seconds). This incorporates air for a tender omelette.

Cook omelette

Place a 9–10 inch nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and swirl until melted and foaming but not browned.

Pour the beaten eggs into the skillet, tilting to distribute evenly. Let the eggs set undisturbed for about 20–30 seconds until the edges begin to set.

Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat around the pan for about 30–45 seconds until the top is mostly set but still slightly glossy.

Sprinkle the warmed Canadian bacon, sautéed onion and pepper evenly over one half of the omelette. Then sprinkle 1 cup shredded cheddar cheese over the same half.

Carefully fold the empty half of the omelette over the filling using the spatula. Press gently to seal and cook for another 30–60 seconds to melt the cheese and finish cooking through (internal heat will continue to cook the eggs). If you prefer a firmer center, cover the pan for 30–45 seconds.

Finish and serve

Slide the omelette onto a plate seam-side down. Sprinkle with chopped chives or parsley and add hot sauce or ketchup on the side if desired.

Serve immediately. This recipe yields one generous single-serving omelette.
