Prep and dry rub

Trim and pat dry

Rinse the chicken thighs under cold water if desired and pat thoroughly dry with paper towels. Removing surface moisture helps the skin crisp and the rub stick.

Season both sides of the chicken lightly with 2 tsp kosher salt and 1 tsp freshly ground black pepper.

In a small bowl, combine the dry rub: 2 tsp smoked paprika, 2 tbsp packed brown sugar, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp ground cumin, 1 tsp ground mustard and 1 tsp crushed red pepper flakes (optional). Mix until uniform.

Brush or rub 2 tbsp vegetable oil over the chicken pieces to help the rub adhere. Sprinkle the dry rub evenly over both sides of each thigh, pressing gently so it sticks. Let rest at room temperature while you prepare the sauce, about 15–20 minutes (or refrigerate up to 4 hours).

Make the BBQ sauce

In a small saucepan over medium heat, add 1 cup ketchup, 2 tbsp apple cider vinegar, 2 tbsp brown sugar, 1 tbsp Worcestershire sauce, 1 tsp hot sauce, 1 tbsp honey, 1 tsp smoked paprika, 2 minced garlic cloves and 1 tsp black pepper.

Bring the mixture to a gentle simmer, stirring frequently. Reduce heat to low and simmer uncovered for 6–8 minutes until slightly thickened. Taste and adjust seasoning — add more honey for sweetness, vinegar for tang, or hot sauce for heat. Remove from heat and set aside. Keep warm.

Grilling or oven method

If grilling (preferred for smoky flavor)

Preheat grill to medium-high (about 400°F / 200°C). Oil the grill grates. Place the thighs skin-side down over direct heat and sear for 4–5 minutes until the skin is nicely browned and releases easily from the grate. Flip and sear the other side 3–4 minutes.

Move the thighs to indirect heat (lower-heat side) or reduce heat to medium-low. Close the grill lid and cook until internal temperature reaches 165°F (74°C) in the thickest part, about 12–20 more minutes depending on thickness. During the last 8–10 minutes of cooking, brush a generous layer of the prepared BBQ sauce on the skin side. Flip, brush the other side, and repeat 1–2 more times to build a shiny glaze — avoid constant brushing earlier to prevent burning the sugar.

If using an oven

Preheat oven to 425°F (220°C). Place the rubbed thighs skin-side up on a wire rack set over a rimmed baking sheet. Roast for 20 minutes, then brush with BBQ sauce and continue roasting for another 10–15 minutes until internal temperature reaches 165°F (74°C) and sauce is caramelized. For extra crispness, broil 1–2 minutes at the end, watching closely to avoid burning.

Finish and serve

Transfer the cooked chicken to a cutting board and let rest for 5 minutes so juices redistribute.

If desired, brush a final thin coat of reserved warm BBQ sauce on the thighs for extra gloss and flavor.

Garnish with 2 tbsp chopped fresh parsley and serve with lemon wedges. Serve immediately.
