Prep and bake potatoes

Preheat and wash

Preheat the oven to 425°F (220°C). Scrub the russet potatoes under running water to remove dirt. Pat them dry with a kitchen towel.

Season skins

Prick each potato 6–8 times all over with a fork to allow steam to escape. Rub each potato with olive oil, then sprinkle evenly with about 1 ½ teaspoons kosher salt and the black pepper, rubbing the seasoning into the skin.

Bake

Place the potatoes directly on the oven rack (use a rimmed baking sheet on the lower rack to catch drips) and bake for 45–60 minutes, until the skins are crisp and a paring knife or skewer slides into the center with little resistance. Exact time depends on potato size; medium potatoes typically take ~50 minutes.

Prepare toppings while potatoes bake

Crumble or roughly chop the cooked bacon (if using) and set aside. Grate the cheddar cheese if not pre-shredded. Thinly slice chives. If using broccoli, steam florets until bright green and tender, about 3–4 minutes, then drain.

Soften the unsalted butter by leaving it at room temperature or microwaving for 10–15 seconds until spreadable. Place sour cream in a small bowl and keep near the oven for quick assembly.

Assemble and serve

When potatoes are done, remove them from the oven using oven mitts. Let them rest 2 minutes, then slice each potato lengthwise across the top about two-thirds of the way and push the ends toward each other to open the potato and fluff the interior with a fork.

Season the exposed interior with a small pinch of kosher salt if needed. Add 1 tablespoon of butter to each potato and allow it to melt into the flesh. Spoon about 2 tablespoons sour cream onto each potato (adjust to preference).

Top each potato with about 1/4 cup shredded cheddar, crumbled bacon (about 1–2 slices worth per potato), and a sprinkle of chives. If using broccoli, distribute the florets on top or on the side. Finish with additional salt, pepper, or hot sauce to taste.

Serve immediately while hot. Leftovers can be refrigerated up to 3 days; reheat in a 375°F (190°C) oven for 15–20 minutes or until heated through to maintain crisp skin.
