Prepare and toast bread

Preheat a skillet over medium heat. Brush both sides of 4 slices sourdough with 1 tbs olive oil (or spread 1 tbs butter if preferred). Place slices in the skillet or a toaster and toast until golden brown and crisp, about 2–3 minutes per side in skillet or 3–4 minutes in toaster. Transfer to a wire rack to keep crisp.

Make the avocado mash

Halve and pit 2 ripe avocados. Scoop flesh into a medium bowl and mash with a fork to your desired texture (smooth or slightly chunky). Stir in 1 tbs fresh lemon juice, 1 tsp sea salt, 1/2 tsp black pepper and 1/4 tsp crushed red pepper flakes. Taste and adjust seasoning. Keep covered until ready to assemble to avoid browning.

Prepare tomato topping

Halve 1 cup cherry tomatoes and place in a small bowl. Add 1 tsp extra virgin olive oil, 2 tbsp thinly sliced fresh basil and 1/4 tsp fine sea salt. Toss gently. Crumble 1/4 cup feta and set aside to sprinkle over finished toasts.

Poach eggs

Bring 1 liter water to a gentle simmer in a medium saucepan; add 1 tsp white vinegar. Reduce heat so water is just simmering (small bubbles). Crack 1 egg into a small cup. Create a gentle whirlpool in the water with a spoon and slip the egg into the center; repeat for the second egg in a separate spot. Poach eggs for 3 minutes for a soft runny yolk or 4–5 minutes for medium. Use a slotted spoon to lift eggs, drain on paper towels and keep warm.

Assemble toasts

Divide the avocado mash evenly among the 4 toasted sourdough slices, spreading to the edges. Top two toasts with the tomato-basil mixture and sprinkle crumbled feta over them. If using eggs, place one poached egg on each of the remaining two toasts.

Finish and serve

Sprinkle everything bagel seasoning (1 tsp) across all toasts, add a pinch of freshly ground black pepper (about 1/4 tsp) and scatter 1/2 cup microgreens or arugula if using. Serve immediately while toast is still warm. Leftover avocado mash can be stored covered in the fridge up to 24 hours with plastic pressed directly on the surface to minimize browning.
