prepare potato

Wash and scrub the potato. Cut into 1/2-inch dice (peel first if you prefer). Place diced potato in a bowl of cold water and let sit 5 minutes to remove excess starch, then drain and pat very dry with a kitchen towel.

Place diced potatoes in a microwave-safe bowl, cover loosely, and microwave on high for 3 minutes until just starting to soften but not falling apart. Alternatively, simmer in salted water 4 minutes, then drain and dry.

Heat a 10-inch skillet over medium-high heat. Add olive oil and 1/2 tablespoon butter. When shimmering, add diced potatoes in a single layer (work in batches if needed). Let cook without moving 3-4 minutes to develop a golden crust, then stir or flip pieces and continue cooking 4-6 minutes until golden and tender. Add diced onion, paprika, garlic powder, 1/2 tsp salt and 1/4 tsp pepper and cook 2-3 more minutes until onion is softened and edges are crisp. Taste and adjust seasoning. Stir in chopped parsley if using. Keep warm in skillet on low while you cook eggs and toast.

Decide how you want the eggs: fried (sunny-side or over-easy) or scrambled. The following steps explain both options.

fried eggs (sunny-side or over-easy)

Heat a nonstick skillet over medium-low. Add 1 tablespoon butter and let it melt, coating the pan. Crack two eggs into a small bowl (or crack directly into the skillet). For sunny-side, cook gently 2-3 minutes until whites are set but yolks still runny; cover for 30-45 seconds to help whites finish if needed. For over-easy, cook 2 minutes until whites set, gently flip with a spatula and cook 15-30 seconds more for runny yolks. Season with 1/4 tsp salt and 1/8 tsp pepper.

scrambled eggs

Crack the eggs into a bowl and whisk until blended. Heat nonstick skillet over medium-low, add 1 tablespoon butter. Pour eggs in and let sit undisturbed 10-15 seconds, then gently stir with a spatula, folding until soft curds form, 1-2 minutes. Remove from heat slightly before fully set; season with 1/4 tsp salt and 1/8 tsp pepper.

keep warm

If homefries need a few minutes more, transfer the cooked eggs to a warm plate and cover loosely with foil while finishing potatoes or toast.

While eggs are cooking or immediately after starting homefries, toast two slices of bread to desired doneness in a toaster or under a broiler. Spread 1/2 tablespoon softened butter or jam on each slice and keep warm.

Plating & serving

Divide homefries onto a plate, place the two eggs alongside or on top, and add the buttered toast. Serve immediately. Offer hot sauce or ketchup at the table if desired.
