Make batter

In a medium bowl whisk together flour, baking powder, sugar, and salt. In a separate small bowl combine milk, 1/4 of an egg (beat one egg lightly and use approximately 1 tablespoon of beaten egg), and melted butter. Whisk wet ingredients into dry until just combined; batter should be slightly lumpy. Let rest 5 minutes.

Cook pancake

Heat a nonstick skillet or griddle over medium heat and brush with 1/2 teaspoon oil or melted butter. Pour the batter onto the hot skillet to form one 5-6 inch pancake (about 1/3 cup batter). Cook until bubbles form on the surface and edges look set, about 1.5–2 minutes. Flip and cook until golden and cooked through, about 1–1.5 minutes more. Transfer pancake to a plate and keep warm.

Fry egg (sunny-side or over-easy)

While the pancake cooks or after keeping the pancake warm, heat a small nonstick skillet over medium-low and add 1/2 teaspoon butter or oil. Crack the large egg into the skillet. Season with 1/8 teaspoon salt and a pinch (1/16–1/8 tsp) black pepper. For sunny-side: cook until whites are set but yolk is runny, about 2–3 minutes; cover the pan for faster whites. For over-easy: cook until whites are mostly set, carefully flip and cook 15–30 seconds more. Remove egg to plate.

Cook sausage patty

If using a raw sausage patty: heat a skillet over medium, add 1/2 teaspoon oil, cook patty 4–5 minutes per side until internal temperature reaches 160°F (71°C) and browned. If using pre-cooked, heat 1–2 minutes per side until warmed through.

Cook ham slice

If using a ham slice: heat skillet over medium, add 1/2 teaspoon butter or oil, sear ham 1.5–2 minutes per side until warmed and lightly browned.

Cook bacon

If using bacon strips: lay bacon in a cold skillet and cook over medium, turning occasionally, until crisp (about 6–8 minutes) or to desired doneness. For quicker cooking, start skillet hot and cook 3–4 minutes per side. Drain on paper towel.

Assemble & Serve

Place the hot cake on a plate. Add the cooked protein of choice beside or on top of the pancake. Top with the fried egg (or serve the egg on the side). Add 1 tablespoon butter to the pancake and drizzle with 1–2 tablespoons maple syrup if desired. Serve immediately.
