Chill
Chill the sparkling wine and orange juice thoroughly in the refrigerator for at least 2 hours so the cocktail is crisp and cold.
Juice (if using fresh oranges)
If using fresh oranges, roll each orange on the counter under your palm to loosen the juice, cut in half, and squeeze until you have 2 cups of juice. Strain through a fine mesh sieve if you prefer no pulp.
Assemble Mimosas
Select four chilled champagne flutes and place them upright on a flat surface.
Pour 1/4 cup of chilled orange juice into each flute (this yields a 1:1 ratio with the sparkling wine when you add 1/4 cup of wine). For a more wine-forward Mimosa, use 3 tablespoons (approximately 0.1875 cups) orange juice per flute; for a lighter, juice-forward drink, use up to 1/3 cup.
Slowly top each flute with 1/4 cup of chilled sparkling wine. Pour gently down the side of the glass or over the back of a spoon to preserve bubbles and minimize foam.
Do not stir. Give the glass a slight tilt and a gentle lift to mix naturally; stirring will flatten the sparkle.
Garnish each flute with an orange slice or twist on the rim or drop a fresh berry into the glass if desired.
Serve immediately while the drink is cold and effervescent.
