Lemonade Base
Juice and measure
Roll lemons on the counter to loosen juices, then cut in half and juice until you have 1 cup (about 4–6 lemons depending on size). Strain through a fine mesh sieve into a measuring cup to remove seeds and excess pulp if you prefer a clear lemonade.
Make quick simple syrup
In a small saucepan combine 3/4 cup of the water and the granulated sugar. Warm over medium heat, stirring until the sugar dissolves completely. Remove from heat and cool 5 minutes. (This yields a lightly sweetened concentrate that integrates more smoothly than dry sugar.)
Combine base
In a pitcher, combine the strained lemon juice, the remaining 2 1/4 cups water, and the cooled sugar syrup. Stir well and taste: adjust sweetness by adding the optional simple syrup 1 tablespoon at a time if desired.
Add ice
Add 2 cups of ice to the pitcher or to individual glasses to chill the lemonade quickly. If you prefer undiluted lemonade, chill the liquid in the refrigerator before serving and add ice to each glass instead of the pitcher.

Zest and infuse
Use a microplane or fine grater to remove 1 teaspoon of lemon zest directly into the pitcher so the oils disperse into the lemonade. This adds a bright, aromatic top note.
Add mint and salt
Lightly bruise the mint leaves between your palms or with the back of a spoon to release aroma, then add to the pitcher. Sprinkle a pinch of fine sea salt into the lemonade and stir. The salt heightens the lemon flavor and balances sweetness.
Mild steep (optional)
