Chicken Seasoning & Cooking

Prepare and flatten

Pat chicken breasts dry with paper towels. If breasts are uneven thickness, place each between two pieces of plastic wrap and pound gently with a meat mallet or heavy pan to an even thickness (about 1/2 inch) so they cook evenly.

In a small bowl combine 2 tablespoons olive oil, 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder and 1 tsp dried rosemary (or 1 tsp fresh minced). Rub the mixture all over both chicken breasts. Squeeze half the lemon over the chicken for bright flavor.

Heat a grill pan or outdoor grill to medium-high (about 400°F / 200°C). Oil the grates or pan lightly. Grill the chicken 4–6 minutes per side, until internal temperature reaches 165°F (74°C) and a golden char develops. Cooking time will vary with thickness.

Transfer grilled chicken to a cutting board and let rest 5 minutes. Then slice thinly across the grain into 1/4-inch strips.

Rosemary Vinaigrette

In a small bowl or jar combine 6 tablespoons extra-virgin olive oil, 2 tablespoons red wine vinegar, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 teaspoon finely chopped fresh rosemary, 1 teaspoon salt and 1/2 teaspoon black pepper.

Whisk vigorously until the dressing is emulsified, or tighten the jar lid and shake for 20–30 seconds. Taste and adjust seasoning: add more honey if you prefer sweeter, more lemon for brightness, or more vinegar for tang. Keep at room temperature until ready to toss.

Assembly — Salad

Place 6 cups mixed spring greens into a large bowl or divide among 4 serving plates for individual portions.

Scatter 1 cup halved strawberries and 1 cup blueberries evenly over the greens.

Sprinkle 1 cup toasted chopped pecans and, if using, 1 cup crumbled goat cheese or feta over the berries and greens.

Arrange the sliced grilled chicken on top of each salad.

Drizzle the rosemary vinaigrette over the salads — about 1 to 2 tablespoons per serving, or more to taste. Toss gently to combine just before serving so greens stay crisp.

Garnish with a small extra sprig of rosemary or a lemon wedge if desired and serve immediately.
