    Prepare the Parsnip Puree

    In a pot, boil parsnips in salted water until tender, about 15 minutes. Drain and blend with 1 tablespoon olive oil and salt until smooth. Set aside.

    Roast the Vegetables

    Preheat the oven to 425°F (220°C). Toss winter squash, mushrooms, green beans, and rainbow carrots in 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

    Sear the Scallops

    Pat the scallops dry with paper towels, season with salt and pepper. In a skillet, heat the remaining tablespoon of olive oil and butter over medium-high heat. Add scallops and sear for 2-3 minutes on each side until golden brown and cooked through.

    Plate the Dish

    On a plate, spread a layer of parsnip puree, top with roasted vegetables, and place seared scallops on top. Garnish with fresh thyme if desired.
