Prepare and Cook Pork Cheeks

Season the pork cheeks with salt, black pepper, and garlic powder. In a heavy skillet, heat duck fat over medium-high heat. Sear the pork cheeks until browned on all sides, about 8-10 minutes. Reduce heat to low, cover, and cook for 2-3 hours until tender.

Make Cornbread

Preheat oven to 400°F (200°C). In a mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar. In another bowl, whisk together milk, eggs, and melted duck fat. Pour the wet ingredients into the dry ingredients and mix until just combined. Pour batter into a greased baking dish and bake for 20-25 minutes.

Ancho Chili Aioli

Prepare Aioli

In a bowl, combine mayonnaise, ancho chili powder, minced garlic, lemon juice, and salt. Mix until smooth. Adjust seasoning as needed.

Brussels Sprouts

Roast Brussels Sprouts

Preheat oven to 400°F (200°C). Trim and halve Brussels sprouts. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy and tender.

Chimichurri

In a food processor, combine parsley, oregano, garlic, red wine vinegar, olive oil, salt, and pepper. Blend until smooth. Adjust seasoning to taste.
