Prepare the Beans and Greens

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add the diced tomatoes and vegetable broth to the pot. Bring to a simmer.

    Stir in the gigante beans, chopped kale, salt, and black pepper. Cook for about 15-20 minutes, until the kale is tender and the mixture is thickened.

Make the Croutons

    Preheat the oven to 375°F (190°C). In a bowl, toss the cubed bread with olive oil and garlic powder until evenly coated.
