Prepare the Oysters

Shuck the fresh oysters and place them in a bowl. Rinse them under cold water and pat dry with paper towels.

Set Up Breading Station

In one bowl, whisk together the eggs and milk. In a second bowl, mix the cornmeal, flour, salt, and black pepper.

Bread the Oysters

Dip each oyster into the egg mixture, allowing any excess to drip off, then dredge in the cornmeal mixture until fully coated.

Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters

Carefully place the breaded oysters in the hot oil, frying in batches if necessary. Fry for about 2-3 minutes on each side or until golden brown.

Prepare Toppings

While the oysters are frying, thinly slice the radishes and jalapeno, and chop the cilantro.

Assemble the Dish

Once the oysters are golden brown, remove them from the oil and drain on paper towels. Serve hot, topped with mole sauce, crumbled cotija cheese, sliced radishes, jalapeno, and fresh cilantro.
