Prepare Cauliflower

Slice the Cauliflower

Remove the leaves and stem from the cauliflower. Slice it into thick 'steaks' about 1 inch thick.

Season and Roast

Preheat the grill or oven to medium-high heat. Brush each cauliflower steak with olive oil, and season with salt and black pepper. Grill or roast for about 10-12 minutes on each side until charred and tender.

Char the Avocado

Prepare Avocado

Cut the avocados in half and remove the pit. Brush the cut side with lime juice and a pinch of salt.

Place the avocados cut-side down on the grill or in a hot skillet for about 3-4 minutes until charred.

Make Yellow Pepper Vinaigrette

Blend Ingredients

In a blender, combine the yellow bell pepper, olive oil, red wine vinegar, honey, and salt. Blend until smooth.

Prepare Smoked Almond Salsa

Chop Ingredients

Finely chop the smoked almonds, tomato, red onion, and cilantro.

Mix Salsa

In a bowl, combine the chopped ingredients, lime juice, and salt. Mix well.

Prepare Mole Sauce

Combine Mole Ingredients

In a saucepan, combine the mole paste and vegetable broth. Heat over medium heat until warmed through, stirring occasionally.

Assemble the Dish

Plate the Ingredients

On a plate, place a cauliflower steak. Top with charred avocado, drizzle with yellow pepper vinaigrette, and add a spoonful of smoked almond salsa.

Finish with Mole

Drizzle mole sauce around the plate and garnish with upland cress.
