Walnut Cream
Toast walnuts
Preheat a small skillet over medium heat. Add 1 cup whole walnuts and toast, stirring frequently, until fragrant and lightly browned, about 4–6 minutes. Transfer to a plate to cool slightly.
Grind walnuts
When the toasted walnuts are warm but not hot, place about three-quarters of them in a food processor (reserve remaining quarters for texture and garnish). Pulse to a coarse crumb, then process 20–30 seconds to reach a fine but not oily paste. Scrape down sides as needed.
Mix cream base
In a medium bowl, combine 1 cup creme fraiche (or sour cream) and 1/2 cup full-fat Greek yogurt. Whisk until smooth.
Combine walnut paste and cream
Fold the ground walnut mixture into the cream base until evenly incorporated. Stir in 1 tablespoon honey, 1 teaspoon lemon zest, 1 teaspoon lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Taste and adjust seasoning (add a little more honey for sweetness or a pinch more salt if needed).
Add texture and herbs
Fold in the reserved coarsely chopped toasted walnuts (about 1/4 cup) and 1 tablespoon finely chopped fresh chives to give the cream crunch and a fresh finish. Chill the walnut cream in the refrigerator for at least 20 minutes to let flavors meld; up to 2 days covered.
Baguette & Assembly
Prepare baguette
If desired, preheat oven to 350°F (175°C). Slice the baguette on the diagonal into 1/2-inch thick slices. Optionally brush each slice lightly with softened unsalted butter (2 tablespoons total) and warm the slices on a baking sheet in the oven for 5–7 minutes until just crisp at the edges. Alternatively, serve slices at room temperature.
Spread walnut cream
Using a small spoon or palette knife, spread about 1 to 1 1/2 tablespoons of walnut cream on each baguette slice. Leave a small border at the edges for a clean look.
Serve
Arrange the prepared slices on a serving platter. Serve immediately if toasty, or covered at room temperature if prepared ahead. Walnut cream will keep refrigerated for up to 2 days; bring to near-room temperature and stir before spreading.
