Prepare and bake sponge

Preheat the oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan (or springform) with parchment. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. In a separate large bowl, whisk eggs and granulated sugar until pale and slightly thickened (about 2–3 minutes by hand or 1–2 minutes with a mixer). Add milk, oil, and vanilla extract and whisk to combine. Fold dry ingredients into the wet mixture until just combined. Stir in hot water slowly until batter is smooth (batter will be thin). Pour batter into prepared pan and bake 18–22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

Trim and prepare base

Once cooled, trim the dome from the sponge to make a flat surface. Using a 7-inch circle cutter (or the inside of your mousse ring), cut one circular layer to fit the base of your mousse cake. Reserve extra cake for crumbs or serving slices.

Vanilla Mousse (Heart Center)

Bloom gelatin and temper yolks

Sprinkle 1.5 tsp powdered gelatin over 3 tablespoons cold water; let sit 5–7 minutes to bloom. In a small saucepan, warm 1/2 cup milk with 1/4 cup sugar and vanilla paste/extract over medium heat until sugar dissolves and milk is hot but not boiling. In a bowl whisk the 3 egg yolks. Slowly drizzle about 1/4 cup of the hot milk into the yolks, whisking constantly to temper. Pour the yolk mixture back into the saucepan with the remaining hot milk and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (do not boil) — about 3–4 minutes.

Combine with gelatin and cool

Remove from heat and immediately stir in the bloomed gelatin until fully dissolved. Let the custard cool to room temperature, stirring occasionally to avoid skin forming. You can place the saucepan over an ice bath to speed cooling but do not let it set.

Whip cream and fold

Whip 1.5 cups cold heavy cream with 2 tablespoons powdered sugar to soft peaks. When the custard is cooled to near room temperature, fold about one-third of the whipped cream into the custard to lighten it, then gently fold in the remaining cream until homogeneous and smooth. Chill briefly (10–15 minutes) if needed to thicken slightly but keep it pourable for molding.

Mold the heart

Line a small heart-shaped silicone mold (or a small heart tin lined with plastic wrap) with plastic for easy removal. Place a thin round of chocolate sponge in the bottom of the heart mold. Spoon or pipe the vanilla mousse into the heart mold up to about 3/4 full. Smooth the top and cover with plastic wrap. Freeze the molded vanilla heart for at least 2 hours, ideally overnight, until firm enough to handle.

Bloom gelatin

Sprinkle 1 tsp powdered gelatin over 2 tablespoons cold water; let sit 5–7 minutes to bloom.

Melt chocolate and add butter

Place chopped bittersweet chocolate and 2 tablespoons butter in a heatproof bowl. Melt gently over a simmering water bath or in short bursts in the microwave, stirring often until smooth. Set aside to cool slightly.

Prepare yolk syrup

Whisk 3 egg yolks with 3 tablespoons sugar in a small bowl. Stir hot water (2 tbsp) into the yolks and sugar to temper, then briefly heat the mixture in a small saucepan over low heat, stirring, just until it thickens slightly (about 1–2 minutes). Remove from heat.

Combine chocolate, yolks, and gelatin

Stir the warm yolk mixture into the melted chocolate until smooth. Add the bloomed gelatin and stir until fully dissolved and incorporated. Allow mixture to cool to room temperature but still fluid.

Whip cream and fold into chocolate

Whip 2 cups cold heavy cream to soft peaks. Fold one-third of the whipped cream into the cooled chocolate base to loosen it, then gently fold in the remaining whipped cream until evenly combined and airy. Keep the chocolate mousse chilled until ready to assemble but workable (not completely set).

Assembly & Finish

Prepare ring and base

Line a 7-inch mousse cake ring (or adjustable cake ring) with acetate or parchment for clean sides and place the trimmed chocolate sponge round on the bottom as the base. Ensure the ring height comfortably fits the frozen vanilla heart plus the chocolate mousse layer.

Place frozen heart

Unmold the frozen vanilla mousse heart and place it centered on the sponge base inside the ring. If the heart is very cold/frozen hard, quickly brush its bottom with a thin smear of melted chocolate (from the chocolate mousse mixture) to help it adhere to the sponge.

Fill with chocolate mousse

Spoon or pipe the chocolate mousse around and over the heart, filling the ring up to about 1/4 inch from the top. Gently tap the ring on the counter to remove air pockets and to settle the mousse. Smooth the top with an offset spatula. Refrigerate for at least 4 hours, or preferably overnight, to fully set the mousse (if the heart was frozen, it will thaw and integrate with the chocolate mousse during chilling).

Optional glaze and decoration

For a subtle sheen, bloom 1/2 tsp gelatin in 1 tablespoon cold water and warm just until dissolved. Brush a very thin layer over the top surface, or pour a thin cooled glaze over if desired. Dust the top lightly with unsweetened cocoa powder and decorate with chocolate shavings or curls if using. Carefully remove the ring and acetate, then transfer cake to a serving plate.

Serve

Chill until serving. Slice with a hot, dry knife (wipe between cuts) for clean slices so the vanilla heart appears in the center. Keep refrigerated and consume within 3 days.
