Chocolate Sponge
Prepare and preheat
Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan or an 8-inch square pan with parchment paper, leaving an overhang for easy removal and lightly grease the sides.
Dry ingredients
In a medium bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and fine salt. Whisk to combine and set aside.
Wet ingredients
In a separate large bowl, whisk the granulated sugar and eggs until combined. Add the milk, vegetable oil, and vanilla extract and whisk until smooth.
Combine and bake
Fold the dry ingredients into the wet mixture until just combined and no streaks remain. Do not overmix. Pour batter into the prepared pan and smooth the top. Bake 15–18 minutes for an 8-inch square, or 20–25 minutes for a loaf pan, until a toothpick inserted in the center comes out with a few moist crumbs. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Chocolate Ganache
Heat cream
Place the finely chopped dark chocolate in a heatproof bowl. In a small saucepan, heat 1/2 cup heavy cream until it just begins to simmer (do not boil).
Make ganache
Pour the hot cream over the chopped chocolate and let sit for 1 minute. Stir gently until smooth and glossy. Stir in the unsalted butter until incorporated. Let the ganache cool slightly (5–10 minutes) so it thickens but remains pourable.
White Cloud Mousse
Bloom gelatin
Sprinkle the gelatin over the cold water in a small bowl and let it bloom for 5 minutes.
Melt white chocolate
Place the 1/4 cup heavy cream in a small saucepan and warm until steaming (do not boil). Put the white chocolate in a heatproof bowl and pour the warm cream over it. Stir until the chocolate is fully melted and smooth. If needed, briefly microwave in 10-second bursts, stirring between, until completely melted.
Incorporate gelatin and chill
Microwave the bloomed gelatin for 8–10 seconds until liquid. Stir the liquid gelatin into the melted white chocolate along with the vanilla extract. Let the mixture cool to room temperature but not set (about 10 minutes).
Whip cream and fold
Whip the remaining 3/4 cup heavy cream to soft peaks. Fold one-third of the whipped cream into the cooled white chocolate to lighten it, then gently fold in the remaining whipped cream until fully combined and airy. Keep the mousse chilled until ready to assemble.
Assembly & Garnish
Cut sponge into pieces
If you used a loaf pan, slice the cooled sponge into 6–8 even rectangular pieces about 1-inch thick. For an 8-inch square, cut into 6 squares. Place the sponge pieces on a tray or serving board.
Layer with ganache
Using a spoon or small offset spatula, spread a thin layer (about 1–2 tsp) of slightly cooled ganache on top of each sponge piece to create a dark 'tuxedo' base. Allow the ganache to set for 5–8 minutes at room temperature or chill briefly (1–2 minutes) to firm it slightly — it should be tacky, not fully hard.
Pipe or spoon mousse
Spoon or pipe a generous cloud-shaped dome (about 2–3 tablespoons) of the white chocolate mousse onto the center of each ganache-topped sponge piece. Use the back of a spoon to shape a soft, billowy peak that resembles a cloud. Chill the assembled pieces in the refrigerator for at least 30 minutes to set the mousse and finish setting the ganache.
Finish and serve
Just before serving, dust each piece lightly with a tiny pinch of unsweetened cocoa powder to create a subtle contrast along the edges. Sprinkle mini chocolate shavings or curls over the mousse for visual texture and, if using, apply a small fleck of edible silver or gold leaf to each dome for a luxe touch. Serve chilled or at cool room temperature.
