Whisk eggs and sugar
In a large heatproof bowl set over (but not touching) simmering water, whisk whole eggs and granulated sugar until warm (about 110°F/43°C) and sugar dissolves, 2–3 minutes. Remove from heat and whip with an electric mixer until pale, thick and ribbon-like, about 6–8 minutes.
Brush cooled sponge with neutral syrup or coffee syrup to add moisture and flavor before layering mousses.
Dark Chocolate Mousse
Melt chocolate
Place chopped dark chocolate in a heatproof bowl. Pour hot espresso over chocolate and let sit 1 minute. Stir until mostly melted then add cubed butter and stir until smooth. If needed, briefly place over simmering water to finish melting but avoid overheating.
Temper egg yolks (optional but recommended)
In a small saucepan, whisk together egg yolks and 3 tablespoons sugar. Warm gently over low heat, stirring constantly, until mixture reaches about 160°F (71°C) and thickens slightly (do not scramble). Remove from heat.
Combine chocolate and yolks
Slowly pour about one-quarter of the warm chocolate into the warm yolk mixture while whisking to temper, then pour tempered yolk mixture back into the chocolate bowl and whisk until glossy and homogeneous. Stir in 1/4 tsp salt. Let mixture cool to room temperature (but still fluid).
Whip cream and fold
Whip 1 cup heavy cream to soft peaks. Fold one-quarter of the whipped cream into the chocolate to loosen, then gently fold in the remaining cream in two additions until uniform and airy. Avoid overmixing so mousse remains light.
If you prepared 1 cup additional chilled heavy cream for folding, use all as directed above. Transfer dark chocolate mousse into a bowl for assembly.
Milk Chocolate Mousse
Melt milk chocolate
Place chopped milk chocolate in a heatproof bowl. Warm the 1/2 cup milk in a small saucepan until just simmering, pour over chocolate and let sit 30–60 seconds. Stir until smooth and add 1 tablespoon butter; stir to incorporate. Let cool slightly.
Temper egg yolks
In a small bowl, whisk 2 egg yolks with 2 tablespoons sugar. Slowly whisk in a few tablespoons of the warm chocolate to temper the yolks, then return tempered yolks to the chocolate bowl and mix until smooth.
Whip cream and fold
Whip 1/2 cup heavy cream to soft peaks. Fold a small portion into the chocolate to lighten, then fold in the remainder gently until smooth and airy. Chill briefly if it seems too loose before assembly.
White Chocolate Mousse
Melt white chocolate
Place chopped white chocolate in a heatproof bowl. Warm 1/4 cup milk until steaming and pour over chocolate. Let sit 30–60 seconds, then stir until smooth. Stir in optional 1/2 tablespoon butter for extra silkiness. White chocolate heats quickly—avoid overheating.
Temper egg yolks
Whisk 2 egg yolks with 1 tablespoon sugar. Temper yolks by whisking in a spoonful of warm chocolate, then add yolks back to the chocolate and mix until glossy.
Whip cream and fold
Whip 1/2 cup heavy cream to soft peaks. Fold a little whipped cream into the white chocolate to loosen, then fold in the rest gently until fully combined and light. Chill if needed to help set.
Assembly & Chill
Prepare pan and layer
Place the cooled chocolate sponge in the bottom of the springform pan. If using acetate ring, line the pan sides. Press the sponge gently so it sits flat. Spread the dark chocolate mousse over the sponge to form the bottom mousse layer (about half of the dark mousse, depending on desired proportions). Tap pan gently to remove large air pockets.
Add milk chocolate layer
Spoon the milk chocolate mousse on top of the dark layer, smoothing gently with an offset spatula. Tap to level and release air pockets. If desired, chill 10–15 minutes to slightly set between layers for cleaner edges.
Add white chocolate layer
Top with the white chocolate mousse, smoothing the surface. For a three-tier look, you can pipe or spread each mousse evenly. Chill the assembled cake in the refrigerator for at least 4 hours, ideally overnight, until fully set.
Unmold and garnish
Run a thin knife around the pan sides, release the springform ring (and acetate if used). Dust the top lightly with unsweetened cocoa powder if desired, scatter grated chocolate curls and fresh berries. Serve chilled.
