Prepare berries
Rinse all berries and drain well. Hull and quarter the strawberries so pieces are similar in size to raspberries.
In a medium bowl, combine the quartered strawberries, blueberries, and raspberries.
Sprinkle the 3 tablespoons granulated sugar over the berries, add 2 tablespoons fresh lemon juice and 2 tablespoons cold water. Gently toss to combine, being careful not to crush the raspberries.
Let the mixture macerate at room temperature for 15–20 minutes, stirring once halfway through so juices develop but berries stay mostly intact. If you prefer a slightly saucier base, gently press a few berries against the bowl with the back of a spoon to release extra juice.
Cloud (Whipped Ricotta-Mascarpone Cream)
While the berries macerate, place the ricotta in a fine-mesh sieve set over a bowl for 10 minutes to drain any excess whey (this produces a lighter, less watery cloud).
In the bowl of a stand mixer fitted with the whisk attachment (or use a large mixing bowl and an electric hand mixer), combine the drained ricotta, mascarpone, heavy cream, powdered sugar, vanilla extract, lemon zest, and salt.
Transfer the whipped mixture to a piping bag fitted with a wide round tip or to a bowl for spooning.
Finish & Garnish
Spoon or pipe a generous dollop of the ricotta-mascarpone cloud into four serving glasses or bowls, creating a shallow well in the center.
Divide the macerated triple berries evenly among the four servings, placing them atop and around the cloud so juices mingle with the cream.
Drizzle about 1/2 tablespoon of honey or elderflower syrup over each serving (total 2 tablespoons across all servings).
Sprinkle each portion with a small pinch of the toasted sliced almonds or finely chopped pistachios for crunch.
Garnish each serving with 2 fresh mint leaves and a few extra whole berries reserved for presentation.
Serve immediately so the cloud remains airy. If preparing up to 1 hour ahead, keep the whipped cloud refrigerated and assemble berries and cloud just before serving to preserve texture.
