Strawberry Base
Prepare strawberries
Wash, hull, and quarter the fresh strawberries. Reserve 4-6 small whole or halved berries for garnish if desired.
Place the quartered strawberries in a bowl with the granulated sugar and lemon juice. Toss to combine and let macerate for 10 minutes to draw out juices.
After macerating, transfer the strawberries and their juices to a blender or food processor. Purée until very smooth, about 30–45 seconds. If you prefer an extra-silky texture, press the purée through a fine-mesh sieve to remove seeds; otherwise leave as-is for a bit more texture.
Creamy Soft Base
In a medium bowl, whisk together the whole milk, heavy cream, sweetened condensed milk, and vanilla extract until fully combined and slightly frothy. This mixture provides the soft, creamy body of the dessert.
Taste the cream base lightly — it should be mildly sweet because the strawberry purée will add acidity and extra sweetness. Adjust with up to 1 tsp additional sweetened condensed milk if you prefer sweeter.
Stabilizer & Texture
If using gelatin for a more stable yet still soft set, bloom the gelatin: sprinkle 1 tsp gelatin over 2 tbs cold water in a small ramekin and let sit 3–5 minutes until it becomes spongy.
Heat the bloomed gelatin gently in the microwave for 8–10 seconds or over a small pan of simmering water just until it dissolves to a clear liquid (do not boil). Whisk a tablespoon of the cream mixture into the dissolved gelatin to temper it, then whisk the tempered gelatin back into the remaining cream mixture until fully incorporated.
If you prefer no gelatin, skip the previous two steps; the dessert will be scoopable and very soft but less stable at warm room temperatures.
Combine & Chill
Fold the strawberry purée into the cream mixture until evenly pink and homogeneous. For a softly marbled look, fold only partly for a few streaks of purée.
Pour the combined mixture into a shallow, chilled container (an 8x8-inch pan or similar works well for faster chilling). Tap gently to release any air bubbles.
Cover the container with plastic wrap and refrigerate until set and very cold, at least 3 hours. If you used gelatin, chilling will produce a soft, spoonable set; without gelatin the mixture will be very soft but scoopable after chilling.
Serve & Finish
Garnish each serving with reserved strawberry slices and a mint leaf. Serve immediately. Keep leftovers covered in the refrigerator for up to 48 hours; texture will soften further over time.
