Strawberry Mousse
Prepare strawberry purée
Hull and roughly chop the fresh strawberries (1 cup). Place in a blender or food processor with 1 tablespoon of the granulated sugar and the lemon juice (1 tsp). Purée until smooth, then pass through a fine-mesh sieve into a bowl to remove seeds. You should have about 3/4 cup smooth purée.
Bloom gelatin
In a small bowl, sprinkle the gelatin (1 tsp) over the cold water (1 tbsp). Let sit 5 minutes to bloom.
Heat and dissolve gelatin
Warm the bloomed gelatin in the microwave for 8–10 seconds or over a double boiler until fully dissolved and liquid—do not boil. Whisk a tablespoon of warm strawberry purée into the dissolved gelatin to temper, then whisk that mixture back into the remaining purée until combined.
Whip cream
In a chilled bowl, whip the heavy cream (1 cup) with confectioners' sugar (2 tbs) and vanilla (1/2 tsp) to soft-medium peaks. Be careful not to overwhip; the mousse should be airy and smooth.
Fold mousse
Gently fold about one-third of the whipped cream into the strawberry purée to lighten it, then fold in the remaining cream until homogeneous and airy. Chill the mousse in the refrigerator while you make the crisp cloud base (15–20 minutes).
Crisp Cloud Base
Preheat and prepare baking sheet
Preheat the oven to 225°F (110°C). Line a baking sheet with parchment paper. If you want uniform shapes, draw 6 circles about 3 inches (7.5 cm) in diameter on the back of the parchment as a template, spaced at least 1 inch apart.
Whisk egg whites
In a clean bowl free of grease, whisk the room-temperature egg whites (2 units) with salt (1/8 tsp) to soft peaks. Use an electric mixer for best results.
Add sugar and stabilize
Gradually add the remaining granulated sugar (3 tbs) one tablespoon at a time while continuing to whip to stiff glossy peaks. Sprinkle cornstarch (1 tsp) and vanilla (1/4 tsp) over the meringue and fold in gently—this adds a slight crisp exterior and helps stabilize the interior.
Pipe or spoon meringue
Spoon or pipe the meringue onto the parchment within the circle templates, forming 6 cloud-like dollops about 3 inches across and slightly peaked in the center. Smooth edges with a wet spatula if desired.
Bake low and slow
Bake in the preheated 225°F oven for 40–60 minutes until the outsides are dry and set but the insides remain slightly tender (you want a crisp exterior with a marshmallow-like interior). Turn the oven off and leave the meringues inside to cool for another 30 minutes with the door ajar to avoid cracking from sudden temperature change. Remove and cool completely on a wire rack.
Assembly & Garnish
Fill cloud bases
Place each cooled crisp cloud base on a serving plate. Spoon or pipe approximately 2 to 3 tablespoons of the chilled strawberry mousse onto each meringue, shaping it to look like a soft cloud perched on the crisp base.
Add fresh strawberries
Top each mousse with a few fresh strawberry slices (about 1–2 tablespoons / total 1/2 cup divided among portions), arranging them lightly so the cloud appearance remains.
Garnish
Dust the finished pieces lightly with powdered sugar (1 tsp) and, if using, a small pinch of freeze-dried strawberry powder for extra color and flavor. Top each piece with a small mint leaf (1 unit per piece).
Serve
Serve immediately for best contrast between the crisp base and the airy mousse. If you must hold them, keep assembled pieces in the refrigerator up to 2 hours—note the crisp base will soften over time.
