Warm and prepare
Turn on the espresso machine and allow it to fully heat (group head and portafilter) for at least 15–30 minutes so temperature stabilizes. Run a short blank shot (no coffee) to flush the group head and warm the portafilter and cup.
Dose and grind
Weigh 7 g of whole espresso beans. Grind immediately to a fine espresso grind (similar to powdered sugar but slightly gritty). Adjust grind so that extraction time will be about 25–30 seconds for a 0.7 oz (20–22 ml) yield — finer grind slows flow, coarser speeds it.
Distribute and tamp
Place the ground coffee in the portafilter basket. Level and distribute the grounds evenly with a gentle tapping or finger distribution. Using the tamper, press down with steady, even pressure (about 20–30 pounds / 9–14 kg) until the surface is flat and polished. Wipe any stray grounds from the portafilter rim.
Lock in and pre-infusion
Insert and lock the portafilter into the group head. Start the shot. If your machine has a pre-infusion function allow 2–4 seconds of gentle water contact before full pressure. This helps saturate the puck evenly.
Extract
Begin timing when water first flows out. Aim for a yield of 0.7 oz (20–22 ml) in about 25–30 seconds. The flow should start dark and syrupy, then lighten to a blond crema near the end. Stop the shot when you reach the target volume or color change.
Serve
Give the cup a gentle swirl to integrate crema and espresso, then serve immediately in a warmed demitasse cup. Enjoy as a single espresso shot (0.7 oz / ~20–22 ml).
Clean up
Knock out the used puck, rinse and wipe the portafilter, and purge the group head with a short flush. Backflush the machine as recommended by the manufacturer on a regular schedule.
Equipment handling
Ensure the grinder is clean and calibrated. Replace burrs or recalibrate if particle size is inconsistent. Keep the espresso machine's water reservoir filled with fresh filtered water to maintain taste quality.
