Prepare peaches

Peel, pit, and slice peaches to yield about 3 cups. If peaches are very juicy, drain briefly and reserve any juice.

Place sliced peaches in a medium saucepan with granulated sugar and lemon juice. Stir to combine and let sit 5 minutes to macerate.

In a small bowl, whisk cornstarch with 1 tablespoon water until smooth. Add cornstarch slurry and vanilla extract to the peaches.

Cook over medium heat, stirring frequently, until mixture thickens and peaches are glossy, about 4–6 minutes. Remove from heat and let cool to room temperature (15–20 minutes). If you prefer a chunkier filling, mash a few slices with the back of a spoon; for smoother, pulse briefly in a food processor once cooled.

Chill a mixing bowl and whisk or beaters in the freezer for 10 minutes (optional but helps whipping).

In a separate bowl, beat the softened cream cheese until smooth and lump-free (about 1–2 minutes on medium speed). Add powdered sugar and vanilla extract, and beat until incorporated and silky.

Pour chilled heavy cream into the chilled bowl and whip until soft peaks form. Fold one third of the whipped cream into the sweetened cream cheese to lighten it, then gently fold in the remaining whipped cream until fully combined and fluffy. Taste and adjust sweetness to taste.

Base / Assembly

If using ladyfingers and optional liqueur/syrup: quickly brush each ladyfinger lightly with peach liqueur or syrup (do not soak). If using sponge slices, brush both sides lightly.

On a serving platter or individual clear glasses, arrange a single layer of the brushed ladyfingers or sponge to form the base.

Pipe or spoon about 2–3 tablespoons of the cream layer over the base, smoothing evenly.

Spoon 1–2 tablespoons of the cooled peach filling over the cream. Repeat layering (base, cream, peaches) to build 2–3 layers depending on vessel height, finishing with a smooth cream layer on top.

Chill assembled pieces in the refrigerator for at least 1 hour (preferably 2–3 hours) to set and allow flavors to meld.

Just before serving, garnish each piece with a small spoonful of the leftover peach filling, a fresh mint leaf, and an optional thin peach slice on top.
