Prepare espresso
Brew 2 shots (about 60 ml) of espresso using your espresso machine. If you don't have an espresso machine, use 60 ml of very strong brewed coffee. Pour the brewed espresso into a heatproof small pitcher or mug.
Bloom cocoa and sugar
In a separate small bowl, mix the unsweetened cocoa powder and 2 tsp granulated sugar. Add about 1–2 tablespoons (15–30 ml) of the hot water and stir to make a smooth paste (this helps remove lumps and bloom the cocoa).
Combine and melt chocolate
Pour the remaining hot water (so total hot water used is 60 ml) into the cocoa paste and whisk until smooth. Add the finely chopped dark chocolate to the hot cocoa mixture and whisk until fully melted and glossy. Pour this chocolate mixture into the pitcher with the espresso and stir until homogeneous. Keep the chocolate-espresso base hot while you prepare the foam.

Heat milk and cream
In a small saucepan, combine the whole milk, heavy cream, and 1 tsp granulated sugar. Warm the mixture over medium-low heat until it reaches about 60–65°C (140–150°F) — hot but not boiling. Remove from heat and stir in the vanilla extract.
Create cloud foam
Use one of the following methods to make a fine, pillowy foam: - Steam wand: Purge and steam the milk/cream mixture until it reaches 65–70°C and has a dense microfoam with small, glossy bubbles. Hold the pitcher at an angle and incorporate just enough air to create a thick, slightly stiff foam. - Handheld frother or whisk: Place the warm milk mixture in a tall jar and froth vigorously with an electric frother for 30–60 seconds until thick foam forms. Alternatively, whisk vigorously by hand for 60–90 seconds. - Immersion blender: Pulse briefly to aerate until a thick foam forms. Once foamed, let the foam settle 10–15 seconds so large bubbles dissipate — you want a creamy, cloud-like texture. Spoon off and reserve the thick foam; keep the liquid milk beneath if separation occurs.
Adjust texture
If the foam is too thin, briefly whisk again to stiffen. If it's too stiff, fold a small amount of the warm liquid milk back into the foam to soften it. The goal is a scoopable, marshmallow-like cloud that will sit atop the drink.
Assembly & Finishing
Pour base: Pour the hot espresso-chocolate base into the warmed mug, leaving about 1–1.5 inches (2.5–4 cm) of headroom for the foam.
Top with cloud: Using a spoon, gently pile the milk cloud foam on top of the hot mocha base. Shape it into a soft peak or 'cloud' that sits above the rim slightly for a dramatic presentation.
Dust and garnish: Lightly dust the foam with cocoa powder (about 1/2 tsp). Sprinkle the chocolate shavings over the top for extra texture. If you like a contrast, sprinkle a very small pinch (about 1/4 tsp) of flaky sea salt over the foam to brighten flavors.
Serve & enjoy: Serve immediately while the base is hot and the cloud remains airy. To drink, spoon through the foam into the chocolate espresso below — the experience should be a silky mocha under a billowy, creamy cloud.
