Prepare
Preheat the oven to 350°F (175°C). Grease and line a 9-inch (23 cm) round cake pan (or an 8x8 square) with parchment paper leaving an overhang for easy removal.
Dry ingredients
In a large bowl, sift together 1.75 cups all-purpose flour, 0.5 cup unsweetened cocoa powder, 1.25 cups granulated sugar, 1 teaspoon baking powder, 3/4 teaspoon baking soda, and 1/2 teaspoon fine salt. Whisk to combine and break any lumps. Add 1 tablespoon instant espresso powder to the dry mix and whisk again so it distributes evenly.
Wet ingredients
In a separate medium bowl, whisk 2 large eggs until blended. Add 1 cup buttermilk, 1/2 cup vegetable oil, and 1 teaspoon vanilla extract; whisk until combined.
Combine wet & dry
Pour the wet mixture into the dry ingredients and stir gently with a spatula until mostly combined and no large streaks of flour remain. Do not overmix; batter will be slightly thick.
Add coffee
Slowly stir in 3/4 cup hot strong brewed coffee until the batter is smooth and pourable. Scrape the bowl to incorporate all pockets of flour. The batter will be thin — this yields a tender crumb.

Bloom espresso
If the instant espresso powder is slightly clumpy, dissolve 1 teaspoon in 1 tablespoon hot water to bloom it and set aside to cool. (You may use directly in whipped cream if already fine.)
Chill equipment
Place a mixing bowl and the beaters in the freezer for 5–10 minutes to ensure cold tools for whipping the cream, which helps stability.
Make mocha mascarpone cream
In the chilled bowl, combine 2 cups cold heavy cream, 1/2 cup softened mascarpone, 1/2 cup powdered sugar, the dissolved 1 teaspoon instant espresso (or dry if you prefer stronger pockets of coffee), and a pinch of salt. Using an electric mixer on medium-high speed, whip until soft-medium peaks form — the cream should be billowy but still spreadable. Taste and adjust sweetness or espresso strength by folding in up to another 1/2 teaspoon powdered espresso or 1–2 tablespoons powdered sugar as desired.
Add finishing touches
Reserve about 1/2 cup of the whipped mousse for piping decorations if desired. Fold the finely grated 1 ounce dark chocolate gently into the remaining cream to create a marbled mocha cloud effect, leaving some streaks for visual interest.
Optional Soak & Decoration
Make coffee syrup (optional)
If using the coffee syrup, combine equal parts strong brewed coffee and granulated sugar (for 1/4 cup syrup, use ~2 tablespoons strong coffee + 2 tablespoons sugar); warm until sugar dissolves and cool slightly. Brush about 2–3 tablespoons of syrup over the cut cake layers to keep them moist and intensify coffee flavor.
Assemble cake
If cake is a single layer, slice horizontally into two even layers with a serrated knife. Brush the cut surfaces lightly with the coffee syrup. Place the bottom layer on your serving plate, spread about half of the mocha whipped cloud evenly over it (use an offset spatula), then place the top layer and spread the remaining cream over the top and sides for a rustic 'cloud' texture. If the cake remains single-layer, simply spread the cream across the top, leaving peaks to mimic clouds.
Decorate
Dust the top lightly with 1 tablespoon unsweetened cocoa powder, sprinkle 1/4 cup chocolate shavings or curls, and finish with a tiny pinch (1/4 teaspoon) of flaky sea salt if using. If you reserved 1/2 cup whipped cream, pipe small rosettes or clouds on the top edge for a decorative finish.
Chill before serving
Refrigerate the assembled cake for at least 30 minutes to firm the cream, up to 4 hours. This helps the layers settle and the mocha cloud hold its shape. Remove from fridge 10–15 minutes before serving for a softer texture.
