Activate yeast
In a small bowl combine warm water (110°F / 43°C) and 1 tsp sugar from the measured amount. Stir in the instant dry yeast and let sit 5–10 minutes until foamy.
Warm milk to lukewarm (about 100–110°F / 38–43°C). In the bowl of a stand mixer fitted with a paddle (or a large bowl if mixing by hand), combine 3 cups of the all-purpose flour, the remaining sugar (measure total 1/2 cup), and salt. Mix briefly to combine.
Add the foamy yeast mixture, warm milk, softened butter, and eggs to the flour. Mix on low speed until incorporated, then switch to dough hook (if using) and knead 6–8 minutes until a smooth, slightly tacky elastic dough forms. If dough is too sticky, add remaining 1/4 cup flour a tablespoon at a time.
Turn risen dough onto a lightly floured surface. Roll or pat to about 1/2-inch (1.3 cm) thickness. Use a 2.5–3 inch round cutter to cut donuts; re-roll scraps and cut additional rounds. Place rounds on parchment-lined baking sheet, cover lightly, and proof until puffy, about 30–45 minutes.
Heat vegetable oil in a heavy pot or deep fryer to 350°F (175°C). Carefully fry donuts, 2–3 at a time depending on pot size, for about 45–60 seconds per side until golden brown. Use a slotted spoon or spider to turn once. Drain on wire rack set over a sheet pan lined with paper towels. Let cool until warm but not hot (about 15 minutes) before filling.
Mango Cream Filling
Bloom gelatin: sprinkle 1 tsp gelatin over 2 tbsp cold water in a small bowl and let sit 5 minutes. Microwave 5–8 seconds or place over a simmering pan just until melted; do not boil. Let cool briefly but keep liquid.
In a medium bowl, beat mascarpone with powdered sugar and vanilla extract until smooth and slightly fluffy. Fold in the ripe mango puree until evenly combined.
Whip the heavy cream to soft-stiff peaks using a chilled bowl and whisk or mixer. Fold whipped cream gently into the mango-mascarpone mixture until incorporated and light.
Stir the melted gelatin into a tablespoon of the mango cream to temper, then fold that back into the full batch so the filling sets slightly and holds shape. Chill the filling at least 20–30 minutes to firm slightly before piping. It should still be pipeable.
Fit a piping bag with a long round tip (or use a piping bag without tip) and fill with the chilled mango cream.
Using a small piping tip or a skewer, poke a hole into the side of each donut and pipe about 1.5–2 tablespoons of mango cream into the center of each donut. Reserve some filling for garnish if desired. Wipe any excess filling from donut surface.
Glaze & Finish
Dip the top of each filled donut into the glaze, letting excess drip back into the bowl. Place glazed donuts on a wire rack to set for 5–10 minutes.
While glaze is still tacky, sprinkle finely diced fresh mango pieces and a pinch of grated lime zest (optional) on top for brightness and texture. If you reserved a little filling, pipe a small rosette on top or dot the glaze center with a small spoonful.
Let glazed donuts sit 10–15 minutes so glaze sets and filling stabilizes. Serve within a few hours for best texture. Store leftover donuts refrigerated up to 2 days (bring to room temperature before serving) because of the dairy filling.
