Measure and mix

In a large measuring pitcher or cocktail shaker (for batch service use a pitcher), combine the dark rum (6 oz), white rum (4 oz), fresh lime juice (3 oz), pineapple juice (8 oz), orange juice (4 oz), passion fruit puree (3 oz), grenadine (1 oz) and simple syrup (1 oz). Stir or shake briskly until ingredients are well combined. This yields about 24 oz of cocktail mixture (concentrated) before ice; adjust quantities proportionally for smaller or larger batches.

Chill

If time permits, refrigerate the mixed base for 30–60 minutes to let flavors marry. If serving immediately, proceed to the next step and use plenty of crushed ice.

Prepare glasses

For six servings, arrange six large tiki mugs or highball glasses. Fill each glass generously with crushed ice (about 1 to 1 1/3 cups per glass). Reserve a small bowl of crushed ice for topping if desired.

Portion the cocktail

Pour 4 ounces of the prepared cocktail base into each glass over the crushed ice (24 oz base in total yields six 4-oz pours; if you made a larger batch, maintain the 4 oz per glass ratio). Gently stir once in each glass to integrate the ice with the liquid.

Add the float

Slowly pour 1/6 oz to 1/4 oz of overproof rum atop each drink to create a subtle float (use the optional overproof rum quantity listed). To create a visible float, pour over the back of a spoon held just above the drink surface.

Garnish

Skewer a pineapple wedge, orange wheel and maraschino cherry together on tiki picks (one per glass). Tuck a mint sprig into each drink and place the skewer across the rim or perched on top of the ice. Add additional crushed ice to shape a small mound if desired to present the garnish.

Optional flaming finish (safety first!)

If using the flambéed overproof rum for a dramatic presentation, place the skewer with fruit on top of the drink. Carefully pour about 1/4 oz of high-proof rum onto the fruit and ignite briefly with a long match or lighter; let burn 5–8 seconds then gently blow out before serving. Do not attempt indoors without experience or proper ventilation; remove any flammable decorations and keep a fire extinguisher nearby.

Serve immediately while chilled and frosty. Provide straws and a small napkin. For a nonalcoholic version, replace rums with extra pineapple juice and a splash of nonalcoholic dark rum flavoring or a nonalcoholic spirit, and skip the flaming finish.
