Method
Chocolate Sponge Cake
Whisk together the sifted cake flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl until evenly combined.
In a large bowl or stand mixer fitted with the paddle attachment, beat the granulated sugar and eggs on medium speed until pale and slightly thickened, about 2–3 minutes.
With the mixer on low, slowly add the hot water (or hot coffee). Batter will be thin—that’s normal and produces a soft sponge.
Divide batter evenly between prepared pans. Bake 22–28 minutes (for 8-inch) or until a toothpick inserted into the center comes out with a few moist crumbs. Rotate pans halfway through for even baking.
Allow cakes to cool in pans for 10 minutes, then invert onto wire racks, remove parchment, and cool completely before assembling.
Chocolate Buttercream
Sift the cocoa powder into a medium bowl to remove lumps.
Using a stand mixer or hand mixer, beat the room-temperature butter on medium speed until smooth and pale, about 2 minutes.
Add the heavy cream, vanilla, and salt. Beat on medium-high for 2–3 minutes until light, fluffy, and spreadable. If frosting is too thick, add up to 1–2 tablespoons more cream; if too thin, add a little more powdered sugar.
Brownie Bites
Preheat oven to 350°F (175°C) if not already heated. Line a small baking dish or mini muffin tin with paper liners or lightly grease.
Melt the chopped chocolate and butter together in a heatproof bowl over a simmering pot of water (double boiler) or in short bursts in the microwave, stirring until smooth. Let cool slightly.
Spoon batter into prepared mini cups or into a small greased 8x8 dish (for later cutting into bites). Bake 10–12 minutes for mini bites (edges set, center slightly soft) or 15–18 minutes for small dish. Cool completely before removing and cutting into bite-sized squares if necessary.
Optional: dust brownie bites lightly with cocoa or powdered sugar.
Chocolate Heart & Decorations
Temper or gently melt dark chocolate: chop and microwave in 20–30 second bursts, stirring between bursts, until smooth (or use a double boiler).
Pour melted chocolate into a small heart-shaped silicone mold or spoon into a parchment-lined tray and shape a heart with an offset spatula. Tap mold lightly to remove air bubbles.
Chill for 10–20 minutes until set, then unmold. If using white chocolate for accents, melt and pipe small dots or lines onto the heart once dark chocolate is set; chill briefly to set.
Optional: brush very lightly with edible dust to create shine or color highlights.
Clay Lion & Panda Figurines (Fondant/Modeling Chocolate)
Tint portions of fondant with gel colors (yellow for lion body, brown for mane accent, black for panda markings, pink for cheeks) using a small amount of color until desired hues are achieved. Knead until smooth.
Build figures in small steps: shape a teardrop or oval for each animal body, a smaller ball for head, and tiny pieces for limbs and ears. For the lion, create a thin fringe or small flattened pieces for the mane and attach around the head with a dab of edible glue. For the panda, use small black discs for eye patches and ears; place tiny white dots for eyes and a small black nose.
Use simple tools (toothpicks, small sculpting tools) to add facial indentations and fur texture. Allow figures to firm at room temperature for at least 30–60 minutes. Store at cool, dry place; avoid refrigeration if possible (fondant can sweat).
Keep figurines small and light so they can sit on the cake without sinking; if heavier, insert a short piece of food-safe dowel into the bottom of each figurine and into the cake for support.
Assembly & Finish
Level the cooled cake layers with a serrated knife or cake leveler if domed. If desired, brush each layer lightly with simple syrup to keep cake moist.
Place one cake layer on your cake board or serving plate. Pipe or spread an even layer (about 3/4 to 1 cup) of chocolate buttercream over the top.
Set the second cake layer on top and apply a thin crumb coat of buttercream over the entire cake to lock in crumbs. Chill the cake for 15–20 minutes to set the crumb coat.
Apply a final thicker layer of chocolate buttercream, smoothing the sides and top with a bench scraper or offset spatula. Create a slightly textured finish if desired to give a rustic 'jungle' look.
Arrange the brownie bites around the base or on top of the cake as little 'rocks' or treats. Place the chocolate heart where it balances the composition—on top or leaning at an angle.
Carefully place the fondant/modeling-chocolate lion and panda figurines on the cake. Position them near the heart and brownie bites to create a little jungle party scene. Use a tiny dab of buttercream or edible glue to secure figurines and the chocolate heart.
Scatter chocolate shavings or sprinkles around the top or base for texture. Add any final edible dust highlights. Keep the finished cake at cool room temperature or in the refrigerator if the room is warm; remove 20–30 minutes before serving to soften buttercream.
