Brew the tea

Bring 2 cups (480 ml) of water to a near boil (about 200°F / 93°C). Remove from heat and add the 2 black tea bags (or 2 tablespoons of loose-leaf tea in an infuser). Steep for 4–5 minutes for a strong flavor, or 3 minutes for a lighter cup. If using lemon zest, add it to the steeping tea to extract extra citrus aroma.

After steeping, remove the tea bags or strain out the leaves. Allow the brewed tea to cool for 5–10 minutes at room temperature so it won't excessively dilute the ice.

Honey Syrup

Make honey syrup

Combine 2 tablespoons honey and 2 tablespoons hot water in a small cup or jar. Stir until the honey fully dissolves into a pourable syrup. This ensures the honey mixes evenly into cold tea.

Assembly

Combine and chill

In a 16-oz (about 480 ml) serving glass, add 1 cup of ice. Pour in the cooled brewed tea until the glass is about three-quarters full (roughly 10–12 oz). Stir in the honey syrup and 2 tablespoons fresh lemon juice. Taste and adjust: add up to 1 more teaspoon honey syrup or extra lemon juice if you prefer sweeter or tarter.

Top off with a little more ice if needed to reach 16 oz total and stir briefly to chill the drink evenly.

Garnish and serve

Float 2 lemon slices on top and add a mint sprig if using. Serve immediately with a straw or long spoon.
