Tea base
Steep tea
Place 2 tablespoons loose green tea (or 2 tea bags) and optional mint leaves into a heatproof container. Pour the hot (175–185°F) water over the tea and mint. Cover and steep for 2.5–3 minutes for a clean, bright flavor (do not oversteep to avoid bitterness).
Sweeten while warm
After steeping, strain the tea into a pitcher to remove leaves (and mint). While still warm, stir in 2 tablespoons granulated sugar until fully dissolved. Taste and adjust sweetness if desired. Allow the sweetened tea to cool to room temperature (about 15–20 minutes).
Pomegranate syrup & fruit
Make a quick pomegranate syrup (optional, faster)
In a small saucepan, combine 1 cup pomegranate juice and 1 teaspoon pomegranate molasses (if using) and 1 tablespoon lemon juice. Bring to a gentle simmer over medium-low heat and cook uncovered for 6–8 minutes, stirring occasionally, until slightly reduced and slightly syrupy. Remove from heat and let cool to room temperature. (If you prefer, you can use the pomegranate juice directly without reducing.)
Strain and combine
If any foam or impurities formed, skim or strain the reduced juice. Add the cooled pomegranate syrup (or 1 cup straight pomegranate juice if not reduced) to the cooled sweetened green tea in the pitcher. Stir to combine and taste—adjust lemon or sweetness as needed.
Assembly & serving
Chill or build over ice
If you have time, chill the combined tea-pomegranate mixture in the refrigerator for at least 30 minutes. To serve immediately (for one 16-oz glass): fill a 16-oz glass with 1 cup ice cubes. Pour the combined tea and pomegranate mixture over the ice, leaving a little headspace.
Garnish and finish
Sprinkle 2 tablespoons pomegranate arils over the top and add the lemon wheel and a sprig of mint if desired. Taste and, if needed, add 1–2 teaspoons simple syrup or sugar dissolved into a small splash of warm water for extra sweetness. Serve with a straw and enjoy.
Notes
This recipe yields enough concentrate for one 16-oz serving when built as directed. If you used the reduced syrup, the flavor will be richer and more vivid; if you used straight pomegranate juice, the drink will be fruitier and lighter. Adjust sweetness and lemon to personal preference.
