Cold Brew Base
Compose base
Measure 8 fl oz chilled cold brew concentrate and 4 fl oz cold water. Combine in a clean mixing pitcher and stir gently to blend. Taste and adjust ratio if your concentrate is very strong; the goal is a balanced 12 fl oz coffee base.
Caramel
Sweeten
Add 1.5 fl oz caramel syrup to the coffee base. If you prefer a deeper caramel-brown sugar flavor, add 0.5 fl oz brown sugar simple syrup. Stir until fully incorporated.
Milk / Foam
Aerate milk
Froth the 2 fl oz of cold milk until it forms a thick, velvety microfoam (about 20–30 seconds with a high-speed handheld frother, longer with a manual device). The foam should be dense enough to sit on top of the iced drink but still pourable.
Finishing & Ice
Assemble iced Aerocano
Fill a 16 oz serving glass about three-quarters full with 1 cup cubed ice. Pour the prepared caramel-sweetened cold brew base over the ice, leaving room at the top for milk and foam (about 2–3 oz of headspace).
Garnish
Drizzle 0.5 oz caramel sauce in a spiral over the foam. If desired, finish with a very light pinch of sea salt to brighten the caramel flavors.
Serve
Insert a straw and serve immediately. Stir before drinking if you prefer the flavors mixed.
