Prepare espresso
Pull two shots of espresso (about 2 oz / 60 ml total) into a warmed 12 oz cup. If using a brew method without an espresso machine, use 60 ml strong brewed coffee concentrated to espresso strength.
Set the cup with espresso aside in a warm place while you make the pistachio cloud so the drink stays hot.
Pistachio Cloud (sweet pistachio foam)
Combine ingredients
In a small pitcher or heatproof jar, combine 4 oz whole milk, 1 oz heavy cream, 1.5 tbs pistachio paste, 1 tsp simple syrup (or honey), 1/4 tsp vanilla extract, and a pinch of salt. Whisk gently until the paste begins to dissolve into the dairy. If using ground pistachios, blend first to a smooth paste using a spoon or small blender.
Heat and emulsify
Gently heat the mixture to 140–150°F (60–65°C). You can do this on the stovetop over low heat while stirring constantly, or in a microwave in 20–30 second bursts, stirring between bursts. Do not boil.
Aerate to create cloud foam
Use a milk frother (handheld electric frother), steam wand, or an immersion blender to aerate the warm mixture until it becomes light, velvety, and cloud-like with small stable bubbles. If using a steam wand, introduce air briefly then submerge to create microfoam; aim for roughly double in volume and a glossy, pillowy texture. If using a French press, pump vigorously until foamy.
Adjust texture
Let the foam settle for 10–15 seconds so it becomes slightly denser and more scoopable. If foam is too thin, re-froth for a few seconds. If too thick, stir in up to 1 tsp warm milk to loosen.
Assembly & Garnish
Pour the prepared espresso into the warmed 12 oz serving cup if not already done.
Using a spoon, scoop a generous cloud of the pistachio foam (about 3–4 oz by volume) and gently place it on top of the espresso, leaving a small well in the center to let a little espresso peek through for contrast.
Sprinkle 1 tsp finely chopped toasted pistachios over the foam and dust lightly with 1/4 tsp pistachio dust or matcha if desired for color and aroma.
Serve immediately with a long spoon. Stir the foam into the espresso if you prefer a creamier, pistachio-forward latte.
