Steep Tea
Heat water
Bring water to near boiling (about 200–205°F / 93–96°C). For a 12 oz latte use 6 oz of hot water to make a concentrated tea.
Place 1 English breakfast tea bag (or 1 tbsp loose leaf in an infuser) in a heatproof cup or small pitcher. Pour the 6 oz of hot water over the tea.
Steep strongly for 4–5 minutes to extract a bold flavor. If you prefer less astringency, steep 3–4 minutes. Remove the tea bag or strain the leaves and discard.
Prepare Milk
Assemble Latte
Pour the concentrated English breakfast tea into a 12 oz serving cup (if steeped in a pitcher, transfer now).
Optionally dust the foam with a light sprinkle of ground cinnamon or grated nutmeg (about 1/8–1/4 tsp) for aroma and presentation.
Serve
Serve immediately while hot. Enjoy with a biscuit or breakfast pastry.
