Heat water

Bring 8 oz (about 240 ml) of water to a near-boil (about 200°F / 93°C). If using an electric kettle with temperature control, set to 200°F. If not, bring to a boil then let stand 30 seconds.

Steep chamomile

Place 1 tablespoon dried chamomile (or 1 tea bag) into a tea infuser or cup. Pour the hot water over the chamomile and steep, covered, for 5 minutes for a full, soothing flavor. Do not steep longer than 7 minutes to avoid excessive bitterness.

Warm and froth milk

While the chamomile steeps, combine 4 oz whole milk in a small saucepan and warm over medium-low heat until it reaches 140–150°F (60–65°C). Do not boil. Alternatively, heat milk in a microwave-safe container for 30–45 seconds. Froth the warm milk with a handheld frother, French press, or steam wand until it has a creamy microfoam (about 15–30 seconds).

Sweeten

Stir 1 tsp honey and 1 tsp vanilla extract into the steeped tea until dissolved. Taste and adjust sweetness if desired.

Combine tea and milk

Strain out the chamomile flowers or remove the tea bag from the steeped tea. Pour the sweetened chamomile tea into a 12 oz cup (reserve about 2 oz room for milk foam). Slowly pour the warmed, frothed milk into the tea, holding back foam with a spoon, then spoon the foam on top to finish.

Finishing & garnish

Sprinkle a light pinch (about 1/4 tsp) of ground cinnamon over the foam, if using. Garnish with a few dried chamomile flowers or a thin lemon slice on the rim for aroma, if desired.

Serve immediately. The recipe yields one 12 oz hot chamomile tea latte.
