Brew Tea

Boil water

Bring 10 fl oz (about 300 ml) of fresh water to a vigorous boil in a kettle or saucepan.

Steep tea

Place 2.5 tsp Assam tea leaves into a teapot, infuser, or directly into the saucepan. Pour the boiling water over the leaves and steep for 3.5–4 minutes for a robust, malty flavor (3 minutes for slightly lighter, up to 5 for very strong).

Strain

If using loose leaves directly in the pot, strain the brewed tea into a heatproof vessel to remove leaves. Keep the hot tea ready.

Combine with Milk & Sweeten

Heat 2 fl oz whole milk gently in a small saucepan or in the microwave until hot but not boiling (about 140–150°F / 60–65°C). Scalding reduces creaminess.

Add 1 tsp sugar (or equivalent simple syrup) to the hot milk and stir until dissolved. If using honey/brown sugar instead, add to taste and dissolve fully.

Pour approximately 10 fl oz of the brewed Assam tea into a 12 fl oz cup, leaving room for 2 fl oz milk. Add the sweetened hot milk to the cup and gently stir to combine. Taste and adjust sweetness if desired.

Finish & Serve

Optional: sprinkle a pinch of ground cinnamon or cardamom on top for aroma and garnish.

Serve immediately in a 12 oz cup while hot.
