Prepare the melon
Wash the honeydew. Cut the melon in half, scoop out and discard seeds, then peel and remove rind. Cut the flesh into roughly 1-inch cubes. You should have about 6 cups of diced melon.
Make lime sugar
In a small bowl whisk together the granulated sugar and cold water until sugar is mostly dissolved. Stir in the fresh lime juice and set aside to meld for 5 minutes; this brightens the melon and lightly sweetens the puree.
Puree the melon
Place the diced honeydew in a blender or food processor in batches if needed. Add the lime-sugar mixture and puree until completely smooth (about 1–2 minutes per batch). Scrape down the sides and blend again for a uniform texture. If the puree seems very thick, add up to 2 tbsp additional cold water to reach a pourable, soft consistency.
Strain (optional for extra silkiness)
For an ultra-smooth 'soft' texture, pass the puree through a fine-mesh sieve into a bowl, pressing with a spatula to remove any fibrous bits. Discard solids.

In a medium bowl whisk together the whole milk, heavy cream, and powdered milk until the powdered milk is fully dissolved and mixture is smooth. Stir in the vanilla extract. This adds body and a creamy mouthfeel to the honeydew soft.
Fold together
Pour the milk-cream mixture into the strained honeydew puree. Whisk gently until homogeneous. Taste and adjust sweetness — if you prefer sweeter, add up to 1 tbsp granulated sugar or 1 tbsp honey and whisk until dissolved.
Chill the base
Cover the mixture and chill in the refrigerator for at least 1 hour (or up to 4 hours). Chilling improves texture and helps the flavors meld, producing a softer, more scoopable result.

Serve chilled (no churn method)
If you want an immediately spoonable soft dessert without churning: after chilling, pour the mixture into a shallow airtight container and freeze for 45–60 minutes, then stir vigorously with a fork every 20 minutes to break up ice crystals until it reaches a soft-serve consistency (total about 1.5–2 hours). Transfer to the refrigerator for 10 minutes before serving if too firm.
Churned method (preferred for smoothness)
If you have an ice cream maker, pour the chilled mixture into the machine and churn according to manufacturer's directions until it reaches soft-serve consistency (typically 20–30 minutes). Serve immediately for a soft texture or transfer to a container and freeze 1–2 hours for a firmer scoopable consistency.
Garnish and serve
Scoop or spoon the honeydew soft into bowls or glasses. Garnish each serving with a drizzle of honey (about 1 tsp per serving), a sprinkle of lime zest, and 1–2 fresh mint leaves. Let sit 2 minutes before eating so the flavors bloom.
