Cake Batter (two 8-inch heart-shaped layers)

Method

Cake Batter (two 8-inch heart-shaped layers)

1

Preheat and prepare pans

Preheat oven to 350°F (175°C). Grease two 8-inch heart-shaped cake pans and line the bottoms with parchment paper. If using alternate method (round + square), prepare those pans and plan to trim/assemble into a heart.

2

Dry ingredients

In a large bowl, sift or whisk together the flour (2 cups), cocoa powder (3/4 cup), granulated sugar (1 3/4 cups), baking powder (2 tsp), baking soda (1 tsp), and salt (1/2 tsp) until evenly combined.

3

Wet ingredients

In a separate bowl, whisk the eggs (2), buttermilk (1 cup), vegetable oil (1/2 cup) and vanilla extract (2 tsp) until smooth.

4

Combine batter

Add the wet mixture to the dry ingredients and mix on low speed until combined and no dry streaks remain. With mixer running on low, slowly pour in hot water (1 cup) — the batter will be thin. Scrape the bowl and mix briefly to fully incorporate.

5

Bake

Divide batter evenly between the prepared pans. Bake at 350°F (175°C) for 25–32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Rotate pans halfway through baking for even color.

6

Cool

Allow cakes to cool in pans for 10–15 minutes, then run a knife around edges and invert onto a cooling rack. Remove parchment paper and cool completely (1–2 hours) before frosting. If cakes dome, trim to level when cooled.

Chocolate Buttercream Frosting + Assembly

7

Prepare buttercream

In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld mixer), beat the room-temperature unsalted butter (1 1/2 cups, about 3 sticks) on medium speed for 1–2 minutes until smooth and pale.

8

Add cocoa

Sift or add the unsweetened cocoa powder (1 cup) to the butter and mix on low to combine, then increase speed to medium and beat 1 minute until uniform and slightly fluffy.

9

Add powdered sugar and liquids

With the mixer on low, gradually add the sifted powdered sugar (5 cups) in batches. Alternate with heavy cream (3/4 cup) and the vanilla extract (2 tsp). If the buttercream is very thick, add additional cream, 1 tablespoon at a time, to reach spreading consistency. If flavor depth is desired, add espresso or cooled strong coffee (2 tbsp) while mixing. Season with salt (1/4 tsp) to balance sweetness.

10

Adjust consistency and chill briefly

Beat buttercream on medium-high for 1–2 minutes until light and fluffy. If it seems too soft for assembly, chill 10–15 minutes to firm slightly so it holds shape during crumb coat and final smoothing.

11

Level and (optionally) brush with syrup

If cake layers are uneven, level them with a serrated knife. Place one heart layer on a cake board or serving plate. Brush a thin layer of simple syrup (2 tbsp) over each layer if desired to keep the cake moist.

12

Fill

Spread a generous layer of chocolate buttercream (about 1 to 1 1/4 cups) over the first layer. Place the second heart layer on top, pressing gently to level. Reserve remaining buttercream for crumb coat and final frosting.

13

Crumb coat

Apply a thin crumb coat over the entire cake using an offset spatula so crumbs are sealed. Chill the cake in the refrigerator for 20–30 minutes until the crumb coat is firm.

14

Final frost and smooth

Apply the remaining buttercream to the cake and smooth the sides and top using an offset spatula or bench scraper for a clean finish. For a softer, more textured finish, use the spatula to create gentle swirls.

15

Make chocolate shavings

Allow the semisweet/bittersweet chocolate (6 oz) to come to room temperature. Using a vegetable peeler, shave along the edge of the chocolate bar to create curls and thin shavings. If the chocolate is too hard and breaks, warm it slightly (10–15 seconds in microwave) or hold it briefly above warm water to soften marginally, then shave.

16

Decorate

Gently press or scatter chocolate shavings along the top edge of the heart and over the top center for a delicate, romantic look. Use larger curls near the center and smaller flakes around the edges. Optionally pipe a border or small rosettes with leftover buttercream.

17

Chill briefly and serve

Chill the finished cake 15–20 minutes to set the buttercream and settle shavings. Bring to room temperature 20–30 minutes before serving for best texture. Slice with a sharp knife wiped between cuts for clean slices.

Tools & Finishing

18

Clean and prep tools: ensure offset spatula, bench scraper, and peeler are clean and dry. Use parchment rounds or a cake board to transport the cake. Store leftover cake covered in refrigerator up to 3–4 days.
