Prepare & Preheat

Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment; lightly flour the sides.

Dry Ingredients

In a medium bowl whisk together 2 cups all-purpose flour, 2 tsp baking powder and 1/2 tsp fine salt until evenly combined.

Cream Butter & Sugar

In a large bowl using an electric mixer, beat 1/2 cup softened unsalted butter and 1.5 cups granulated sugar on medium-high speed for 3–4 minutes until pale and fluffy.

Add Eggs & Vanilla

Add the 3 large eggs one at a time, beating after each until incorporated. Scrape the bowl, then mix in 2 tsp pure vanilla extract.

Combine Wet & Dry

With the mixer on low, add one-third of the dry flour mixture, then half of 1 cup whole milk; continue alternating until all flour and milk are incorporated, mixing just until combined. Do not overmix.

Bake

Divide batter evenly between prepared pans and smooth the tops. Bake in preheated oven for 22–28 minutes or until a toothpick inserted in the center comes out clean and the tops are lightly golden.

Cool

Allow cakes to cool in the pans for 10 minutes, then run a knife around edges and invert onto wire racks. Peel off parchment and cool completely before trimming and assembling (about 1 hour).

Buttercream Frosting

Beat Butter

In a clean large bowl, beat 1 cup softened unsalted butter on medium speed for 2–3 minutes until creamy.

Add Sugar Gradually

Reduce speed to low and add 4 cups confectioners' sugar, 1 cup at a time to avoid a sugar cloud. After each addition, beat briefly, then increase speed to medium and whip until smooth.

Flavor & Adjust Texture

Add 1 tsp pure vanilla extract, 3 tbsp heavy cream (or milk), and 1/4 tsp fine salt. Beat on medium-high for 2–3 minutes until light and fluffy. If frosting is too stiff, add 1 tsp more cream at a time; if too thin, add more powdered sugar 1/4 cup at a time.

Decorations & Assembly (Baby Shark Theme)

Level & Fill

If cake domes have formed, level each layer with a serrated knife. Place one layer on a cake board or serving plate. If using, spread 1/2 cup strawberry jam in an even layer over the first cake layer (keeps with baby pink theme).

Crumb Coat

Apply a thin layer of buttercream over the filled cake to seal crumbs. Chill in fridge for 20–30 minutes until set.

Final Frosting & Color Division

Divide remaining buttercream into 4 bowls: roughly 60% blue (ocean), 20% light blue (gradient), 15% white (highlights), 5% pink (cheeks/accents). Tint with gel food colorings: start with 1 tsp blue in the largest portion, 1/2 tsp light blue, 1/4 tsp white (or leave uncolored), and 1/4 tsp pink. Adjust to your preferred shade.

Smooth Frosting

Apply the blue buttercream to the sides and top of the cake using an offset spatula. Use the light blue to create subtle waves or gradient toward the top edge and white to add highlights. Smooth with a bench scraper to get even sides, or leave textured to mimic waves.

Create Baby Shark Cutouts (Fondant)

Knead 8 oz white fondant until pliable. Use a small sharp knife or fondant cutters to cut two shark shapes (body and tail) approximately 3–4 inches long each. Use small amounts of blue gel to tint a portion of fondant for the shark bodies if you prefer colored fondant (mix gel into small fondant piece until even). Attach tail to body with a dab of water and press gently. Use black edible marker or a tiny dab of black gel for eyes and pink for a smiling mouth/cheeks. Insert toothpicks into the back of each fondant shark (leaving enough exposed so it can be safely inserted into the cake).

Piping Details

Fill piping bags fitted with round tips with the remaining colored frostings (blue, light blue, white, pink). Pipe small rosettes, waves, bubbles and accents around the base and top. Use white or light blue dots for bubbles and black food marker for tiny eye details if not using fondant eyes.

Arrange Sharks & Garnish

Insert the fondant sharks into the cake where desired to create a playful scene. Add sprinkles sparingly to suggest underwater sparkle and place fresh berries around the base or on the serving plate for contrast.

Happy Birthday Text

Use a piping bag with a small round tip and some white or pink buttercream to pipe 'Happy Birthday Baby Shark' on the top of the cake or on a fondant plaque. Practice on parchment before piping directly on the cake.
