Dough
Activate yeast
Combine warm water (about 105–115°F / 40–46°C), warm milk, sugar, and instant dry yeast in a large measuring cup or bowl. Stir briefly and let sit 5–8 minutes until foamy.
In the bowl of a stand mixer fitted with a dough hook (or in a large bowl), whisk together the flour and salt. Start the mixer on low and slowly pour in the yeast mixture and the melted butter. Mix until a rough dough forms, then increase speed to medium and knead 6–8 minutes until the dough is smooth, elastic, and slightly tacky. If kneading by hand, knead on a lightly floured surface for 10–12 minutes.
Punch down the risen dough and turn it out onto a lightly floured surface. Divide the dough into 12 equal pieces (about 65–75 g each). Let rest 10 minutes, covered, to relax the gluten.
Roll each piece into a 10–12 inch (25–30 cm) thin stick about 1/2 inch (1.3 cm) thick — or shape as desired for traditional garlic stick form. Place sticks on a parchment-lined baking sheet, leaving 1 inch between them. Cover loosely and let rise 20–30 minutes until slightly puffy.
Garlic Butter Topping
While the shaped dough is resting, prepare the garlic butter. In a small saucepan or microwave-safe bowl, melt the 6 tablespoons unsalted butter over low heat. Remove from heat and stir in minced garlic, chopped parsley, grated Parmesan, 1 teaspoon salt, black pepper, and red pepper flakes (if using). Taste and adjust seasoning. Keep warm.
Preheat oven to 400°F (200°C) with a rack in the center while butter is being prepared and dough is finishing its second rise.

Optionally sprinkle each stick with a light pinch of coarse or flaky sea salt for texture.
Serve warm with marinara or as-is. Leftover garlic sticks keep in an airtight container at room temperature for 1–2 days; reheat in a 350°F (175°C) oven for 5–7 minutes to refresh.
