Prepare sausages

Bring a small pot of water to a gentle simmer. Add the hot dogs and simmer 3–4 minutes until heated through. Remove and pat dry. Alternatively, grill or pan-sear until lightly browned. Let cool slightly.

Make cream cheese filling

In a medium bowl, combine softened cream cheese, shredded cheddar, yellow mustard, chopped green onions, sweet pickle relish, garlic powder, onion powder, and black pepper. Mix until smooth and evenly combined. Taste and adjust seasoning.

Lay a flour tortilla flat on a work surface. Spread about 2 to 3 tablespoons of the cream cheese mixture in a strip down the center of the tortilla, leaving a 1-inch border at each end.

Place one warmed hot dog on top of the filling strip. Lay two pickle slices along the length of the hot dog (one on each side) so the pickles will be inside the roll.

Fold the short ends of the tortilla over the hot dog ends, then tightly roll the tortilla away from you, enclosing the hot dog and filling seam-side down. Brush the outside lightly with melted butter. Repeat for remaining tortillas and sausages.

Optional breading

If you want a crispy exterior, set up a breading station: bowl of flour, bowl with beaten eggs, and bowl with panko mixed with 1/2 teaspoon salt. Working one roll at a time, dredge the roll in flour (shake off excess), dip in beaten egg, then press into panko to coat evenly.

Pan-fry method

Heat 1/2 cup oil in a large skillet over medium heat. Add rolls seam-side down and cook 2–3 minutes per side, turning carefully, until golden brown and crisp. Transfer to a paper towel-lined rack to drain. Use remaining oil as needed in batches.

Baking method (lower oil option)

Preheat oven to 400°F (200°C). Place rolls seam-side down on a parchment-lined baking sheet. Lightly brush or spray with oil. Bake 12–15 minutes, turning once, until golden and heated through. If breaded, bake 15–18 minutes until crisp.

Sauce (optional)

Whisk together ketchup, mayonnaise, and hot sauce in a small bowl. Serve alongside the Frank Rolls for dipping.
